What does "deleted member" mean? (see under rudycallsmedoll's name...) No idea...I wonder if she joined then left? I don't see anything that she posted that would have her "deleted" but...who knows? I suppose you could ask on one of the general boards?

Spinach, bulger, refried bean wraps one meal with tomatoes and one without. Hot sauce on alal
Snacks
seitan jerkey (vegan) bought in Beirut and expensive...not great but wanted it Nutella and peanut butter (fell off the wagon here but, still vegetarian)

January 26
Breakfast: avocado (whole one) on two slices toasted oat bfread with cooked tomato on top. Coffee
Lunch: leftover zucchini soup, frozen bean burger from freezer (recipe earlier somewhere), catsup & mustard, pickle sliced on burger. two slices toasted regime/fiber bread
Dinner: capellini topped with vegetable salad*
Snacks: 2 dates with herbal tea and 1/2 tsp sugar
Vegetable Salad (Usually just take what is in the house and play but did write this down)
1 can white beans, drained and rinsed 1 can corn, drained and rinsed 1 small onion, chopped 3 cloves garlic, minced 2 small-medium tomatoes, chopped
salt and red pepper flakes balsamic vinegar and olive oil
(today I had leftovers and added a chopped avocado - this probably would be better with green pepper for crunch and makes enough for at least four servings with the pasta)

Breakfast & Dinner
coffee leftover capellini with topping from yesterday
NOTE: wanted leftovers gone so had it two meals
Lunch tabouleh - added cooked garbanzo beans and lentils for protein 1/2 cup strawberries
Snacks
2 dates bad reasoning - get rid of the nutella so...eat it? So...not vegan even though mixed with peanut butter...it is gone now
NOTE: on the 28th I begin a "Sugar Cleanse" that is vegan. It is one that someone has as part of her Facebook vegan mentor/coaching group as a week of detoxing. She has a menu for the week (and many substitutions will be made due to where I live) ANYWAY...might write down what I do eat here with comments.

(started the 7 day sugar cleanse on the tail-end of the Veganuary challenge - this is vegan, too, and comes with 7 days of menu ideas and recipes.)
Breakfast Grain and Nut Seed Porridge
*(I forgot to soak overnight SO made a smoothie of the ingredients and ruined the blender by leaving the spoon in the blender)
Coffee
Lunch Beet Salad with avocado dressing
Dinner Cauliflower Mash with lentils Salad (I skipped it as I was full)
Snacks Not hungry so skipped snacks
Recipes
Grain and Nut Seed Porridge ¾ cup plant milk (I used soy) 1 tsp tahini (in place of unsweetened nut butter) 4 tbsp almond slices (in place of 4 tbsp almond flour) 1 tbsp chia seeds (in place of hemp hearts) 2 tbsp flax seeds, ground
½ cup white beans, cooked (in place of protein powder) ¼ tsp cinnamon ½ cup mulberries (called for berries...that is what I had in the house)
Put all but berries in the liquid overnight then add berries in the morning. (I forgot the overnight thing so put all in the blender and made a beverage)
Beet Salad with Avocado Dressing (for 2)
2 medium/large beets (raw then roasted) 3 cups mixed green leaves 1 carrot, grated 4 tablespoons cooked quinoa 1 cup red kidney beans
Avocado dressing (made in small blender) ½ small ripe avocado ¼ cup finely diced red onion juice of ½ lemon ¼ teaspoon cumin salt and pepper to taste water to thin – if necessary
Cauliflower Mash with Lentils (for 2)
1 head of cauliflower, in pieces 2 tbsp cashew cream (used soy milk) [cashew cream is made by soaking raw cashews in hot water for over an hour then draining and whirring with water to create a cream...I opted to use the soy milk - a few tbsp - as I had not made the cream and thought it silly with only me eating the meal] broccoli, steamed 1 medium onion, sliced thin jar (glass) sliced mushrooms and some of the liquid (the recipe said shitake mushrooms BUT I didn't have them or look for them so...) tamari vegetable bouillon cube (half) 1 cup lentils
Boil or steam cauliflower and broccoli Mash broccoli with wand blender and soymilk Saute onion and mushrooms in broth and tamari and bit of liquid from mushrooms adding in lentils (precooked) at the end.
Put mash down put lentils on top put broccoli around can top with chopped nuts (3 walnuts chopped) did not do it
green salad with vinaigrette (did not have it) 4 cups greens sliced or diced green apple red pepper cucumber walnuts (3)
vinaigrette:
2 tbsp raw cider vinegar 1 tsp dijon mustard 1 large garlic clove, minced 1/4 cup cooled vegetable stock salt and pepper to taste (she had down 1/4 tbsp but think she meant tsp)
Shake vigorously and then let sit for at least 10 to 30 minutes (or longer) for flavors to mix and mellow.

Breakfast chocolate smoothie: soy milk, romaine lettuce, small banana, tbsp flax seeds, teaspoon peanut butter, 1.4 T cocoa powder, 1/2 cup white beans. Coffee
Lunch Chard Salad: sliver big bowl of leaves (remove stems), lemon juice, tahini, s&p, sunflower seeds, poppy seeds, raisins, red beans
Dinner zoodles topped with 1/2 cup pureed steamed sweet potato whirred with 1/2 cup coconut milk, 1/2 cup white beans, 1 clove garlic, tsp dry basil, 1/2 red pepper (I didn't have so did not add but chopped and used as garnish). Then, sprinkle on tbsp toasted slivered or flaked almonds. I added a sprinkle of red pepper flakes for color and flavor

I had the last sugar cleanse vegan meal on the 30th of January, had a non-vegan meal for lunch, had a vegan dinner last night and today, the 31st, decided I was finished with the vegan challenge for now.
It has been a good experience. I have always had more vegetarian/vegan meals than meat based ones and will continue to do so in the future but will not be totally vegan at this moment in time. Making everything from scratch where I live (seitan and other things) is a bit much or more than I want to take on. So...not totally vegan 24/7 but more so than before.

Holly - I had a burger today and have to say that I did NOT enjoy it. I found myself wishing I had one of my bean burgers instead. Hubby, too, is turning more and more away from red meat so that is a plus. As for the burrito I had tonight...beans, rice with wild rice and cheddar with ranch dressing and lettuce on the side...that hit home like nothing the past month. I do think that I will be eating more vegetarian and vegan meals than ones with animal protein. I still want to make the seitan after finding the vital wheat gluten and want to try to make vegan sausages so...there may be more recipes here in the future though not on the Vegan January challenge thread...
