if not, and you like banana flavored soggy french toast, i highly recommend! i am a huge fan of eggy, soggy french toast (not dry and crispy) and the recipe i found said not to expect it to taste like a pancake, but to instead expect it will taste like the middle of the french toast. she was right!
i used 1 medium sized banana and 2 whole eggs. i added an 1/8th teaspoon of baking powder, 1/4 teaspoon of vanilla, pinch of salt, and 1/4 teaspoon of granulated sugar. whisk together till a little bubbly and then do small pancakes (2 tbsp of batter per pancake, approximately). it only takes about a minute on each side. they're kind of like a fluffy crepe. because they're so small and flat and don't absorb anything, i only needed a small drizzle of syrup. normally i use AT LEAST 2 to 3 tbsp for a serving of french toast or pancakes.
this batch made about 9 mini pancakes.
