I was browsing the Weight Watchers recipe list trying to find a dessert recipe that wasn't just fruit. Don't get me wrong, I love fruit, but must admit that I like something more "starchy sweet" on occasion. I didn't want anything high point or overly addictive. I just discovered and made their recipe for Chocolate Cranberry Biscotti. Actually, the recipe is for Chocolate Cherry Biscotti, but it said you could use dried cranberries instead of dried cherries. I only had dried cranberries on hand. I just had one with a cup of espresso and it is very satisfying. Yummy and crunchy. A hint of chocolate with the nice zip of cranberry flavor. I don't feel the desire for more than one AT ALL. If anyone is interested, the original recipe (4 pts per biscotti) can be found at cmx.weightwatchers.com/nui/explore/details2/WWRECIPE:5626a624f79cf9120df3a745
I happened to lighten the recipe up a bit with beautiful results. Firstly, the 1/2 cup dried cranberries was a couple fewer points per 1/2 cup than the dried cherries. Plus, I used 1/3 cup of Truvia baking blend instead of the 2/3 cup sugar in the original recipe. That made it so that the points value was 1 pt fewer per serving (biscotti) than the original recipe, but with the equal amount of sweetness and good results. Here is the "lightened version", which calculates to 3 pts per biscotti (1 pt fewer than the original recipe): cmx.weightwatchers.com/nui/explore/details2/MEMBERRECIPE:59a0767370ab70173ce18bc1:59a0a4b6d33603170e02fdb8
Note: I also chopped Hershey's sugar free chocolates instead of using regular mini chocolate chips, but I doubt that would affect the points value any.
If anyone can't get access to the recipes who wants one (or both), let me know and I'll type it all out.
