This is done with convenience products Trader Joe's mirepoix or cut up about a cup of carrot, onion and celery 2t olive oil Thyme, salt and pepper 1 can petite diced tomatoes I box TJ chicken broth I package frozen vegetables I like TJ organic 4 or Ami tire of peas, carrots, corn and green beans I package cooked grilled chicken strips cut in small pieces 10 ounces cooked brown rice Sautéed the mirepoix in olive oil til soft add the seasonings and then the tomatoes and broth. Heat for about 20 minutes. Add the vegetables, rice, chicken and two cups more broth if needed. Heat thoroughly and add more seasoning to taste. You can use any products and guesstimate ingredients but this makes a thick, hearty soup.

capecodmomma , the only points would be the brown rice. Depends on the serving size. I would make the base and measure a serving of rice.

Approximately how much soup does this recipe yield? What do you estimate would be a serving size? TIA
