Marinated Roasted Golden Beets wrap each beet in a foil packet and roast at 400 degrees with the skin on 1-1.5 hours. They are done if when the foil is peeled back, you can poke a fork in them. Cool well and remove the skin, slice or dice and chill in a plastic bag. The marinade is 1/2 shallot diced, 1 T each olive oil, lemon juice, lime juice, and orange juice with 1t Dijon mustard, salt and pepper. I marinate the beets about an hour before I use them and pour on top of lettuce. You will not need a salad dressing and your own calories/points in the marinade comes from the olive oil. Golden beets are milder than red ones though may be harder to find.

Aren't there points in 3T of juice (lemon, lime, and orange)? They're not whole fruits (which of course are zero)... 1T of orange juice is zero, but 3T are 1 point...

golden beets and delicata squash are favorites of mine also. usually find them at a whole food store
