Deviled eggs would be reasonably low in points & easy to transport. Veggie trays are pretty standard but good if you're going to a party that's going to have a lot of high point foods. Make a dip using greek yogurt to keep that low as well. If you want something for your own house, then these (link below) nachos are very tasty. This makes a big pot of very tasty chili---I gave the recipe to a few people and they LOVED it! Freezes well, too. I took the original WW recipe and tweaked it to get it down to zero points.
Zero Point Turkey Bean Chili
Ingredients:
Cooking spray
20 ounces ground turkey, 97-99% fat free
2 medium onions chopped
2 cloves garlic, minced
2 large carrot(s), diced 2 ribs celery, diced 1 red bell pepper, diced 1green bell pepper, diced
3 Tbsp chili powder, may use any kind you like or blend different ones---more or less to taste
1 Tbsp smoked sweet paprika
3 tsp ground cumin, more or less to taste
1 cup chopped mushrooms
Four cans kidney beans, rinsed and drained (60 ounces total)
2 cans fat free refried beans (30 ounces total)---I use Ortega as some of the other ones I looked at had sugar in them
2 cans Rotel tomatoes with chili peppers (do not drain)
3 cups FF low-sodium chicken broth
Salt, black pepper, cayenne pepper to taste
Instructions:
Coat a large pot with cooking spray; set over medium-high heat. Brown turkey, breaking up meat with a wooden spoon as it cooks, about 10 minutes; drain and set aside.
Coat the large pot again with cooking spray; set over medium heat. Cook onions, carrots, and peppers, stirring occasionally, until soft but not browned, about 10 minutes. Add garlic; cook, stirring, 1 minute. Add mushrooms and cook, stirring occasionally, for 5 minutes. Add chili powder, paprika, cumin, salt, pepper and cayenne; cook and stir for 1 minute.
Stir in broth, tomatoes, re-fried beans, and turkey; bring to a boil. Reduce heat to low and simmer, uncovered, stirring every 5 minutes, for about 30 minutes. Add kidney beans and simmer on low heat for another 20 minutes.
Serve over cauliflower rice. Serving size: 1.5 cups
