Thank you all for the wonderful week of sharing. We will begin a new round of 7 in 7 tomorrow. I hope that all of you will continue to participate. I also want to thank Pam for organizing us and keeping the thread going AND thank all of those willing to take a week of leading the group.
Sandwich suggestions To make a sandwich even healthier: β’ Switch to reduced salt wholemeal or wholegrain bread. β’ Limit high-fat spreads such as butter or margarine. You wonβt miss butter if your sandwich has a few tasty ingredients already. β’ Use plenty of vegetable or salad fillings β’ Limit your use of spreads high in saturated fat like butter and cream cheese. Replace them with a thin spread of peanut butter or other nut spreads, hummus, low-fat cheese spreads or avocado. β’ Choose reduced fat ingredients when you can, such as low-fat cheese or mayonnaise. β’ Try to reduce your use of processed meats. Instead use fish such as salmon, tuna or sardines. β’ Enjoy toasted sandwiches with baked beans.
General suggestions for healthy cooking Healthy cooking methods include: β’ Steam, bake, grill, braise, boil or microwave your foods. β’ Modify or eliminate recipes that include butter or ask you to deep fry or sautΓ© in animal fat. β’ Avoid added oils and butter; use non-stick cookware instead. β’ Donβt add salt to food as it is cooking. β’ Remove chicken skin and trim the fat from meat. β’ Eat more fresh vegetables and legumes. β’ Eat more fish, which is high in protein, low in fats and loaded with essential omega-3 fatty acids.
Other tips Suggestions include: β’ Spend a little time on presentation. You are more likely to enjoy a meal if itβs visually appealing as well as tasty. β’ Make every meal an occasion. Set the table. Eat with your family. Give yourself the opportunity to enjoy your food without distractions like television. β’ Long-term deprivation, such as crash dieting, doesn't work. Allow yourself the occasional guilt-free treat. β’ You are less likely to overeat if you eat slowly and savour every mouthful.
Things to remember β’ In many cases, favourite recipes can be modified so they offer a lower fat content. β’ Choose to steam, bake, grill, braise, boil or microwave your foods, rather than deep fry them. β’ Use non-stick cookware. β’ Microwave or steam your vegetables instead of boiling them to retain the nutrients.
Questions: 1. What favorite recipes have you modified so they are OP and points/SFT friendly? 2. Do you make meals special? (set table, linens, pretty plates, plating food prettily?) 3. What recipe have you tried and like recently? OR What recipe would you like to make soon (new or old)? 4. FUN: Tell us what you like to read OR what your favorite type of music is OR something else about how you like to spend your free time.

1. What favorite recipes have you modified so they are OP and points/SFT friendly? Quite a few of the Lebanese recipes - cut WAY down on the fat in them (tabouli, mjudra, hummus, etc)
2. Do you make meals special? (set table, linens, pretty plates, plating food prettily?) Not often...do have a tablecloth on the table but eating alone kind of makes it less important though plating a dish with pretty colors does perk me up some.
3. What recipe have you tried and like recently? OR What recipe would you like to make soon (new or old)? I received a terracotta covered roasting/oven baking casserole for Christmas and want to try it out...still looking for a recipe.
*I want to try Cherry's Breakfast Cookies *those eggs in muffin tins *homemade veggie burgers: can of beans, drained+ 1/2 cup oats mashed together to which you add salsa or tomato sauce, some sauteed vegetables and mash with pototo masher some more. Form patties, cook in pan, serve
4. FUN: Tell us what you like to read OR what your favorite type of music is OR something else about how you like to spend your free time. *I am an eclectic reader and do it as a hobby - get ARCs (Advanced Reader Copy) of books and then read to review. I have met authors, publicists and others and now have some favorite authors to read. *Favorite music is probably from the 50's and 60's...maybe through the 70's *I enjoy being with friends, spending time with the cat on my lap, checking in with online friends, soaking in the tub with a good book and sometimes a glass of wine.

Personals:
Pam: I agree with you that having pots and pans you know and love is great...adding new ones for me usually means the nonstick pan has worn out Cherry: I just looked up cilantro and parsley - they can be frozen Check out: www.thekitchn.com/why-freezing-is-the-best-way-to-preserve-cilantro-221279 AND www.thekitchn.com/the-best-ways-to-preserve-parsley-221275 AND awaytogarden.com/how-to-freeze-parsley-chives-and-other-herbs/Holly: I hope the leaky pipe and walls are fixed and the insurance comes through! Sounds like a mess...just read your description of what has happened - twice. I don't envy you. I don't know if doing a "spell" on the house or smudging it or what might keep plumbing or other problems from occurring again! Here's to calmer less stressful times for you, your husband and the house you live in! Cindy: I like your idea of sprinkling salt and herbs on at the end. I seem to keep adding while cooking so perhaps your idea would be better and healthier. Hope you find pots & pans you like to replace those you have and want to replace. Judy: Thank you for the recipe for quinoa...will try it soon! Jan: Thank you for the wonderful sounding recipes for spices! My daughter brought me some ranch dressing mix from the USA...will see if ingredients are available locally for your recipes and give them a try! Beverly: I gave away most of my cast iron and also my pewter when I got married - wish I had them but so heavy to move. How do you use cast iron to bake cornbread in? Sounds intriguing!

1. What favorite recipes have you modified so they are OP and points/SFT friendly? I mainly try to cut back on ingredients that are higher fat, sugar, etc. Often seems that recipes include more than needed for our tastes & needs. If changes are not acceptable or possible, then it's a dish that I only make or eat very rarely - and enjoy it the way it is.
2. Do you make meals special? (set table, linens, pretty plates, plating food prettily?) No, but it does sound like a good idea. My dream life involves eating a leisurely breakfast with a warm beverage in a beautiful vintage cup...
3. What recipe have you tried and like recently? OR What recipe would you like to make soon (new or old)? I'll try to remember to add something this afternoon after work.
4. FUN: Tell us what you like to read OR what your favorite type of music is OR something else about how you like to spend your free time. I enjoy science fiction, but find that so many in this genre have become so dark/dystopic. I admit to enjoying lighter reading selections. I don't mind being challenged in my reading, but since it's a form of relaxation, I really would like to be entertained.
Music, enjoy listening to 70's - favorites from high school & college era.
Free time - I enjoy just about any kind of arts/crafts. Currently, papercrafts and I'm determined to someday master crochet. Someday, find more time to sew again. Also, we have 3 dogs, so I enjoy time with them...grooming, training (one's still a puppy - just 9 months old).

1. What favorite recipes have you modified so they are OP and points/SFT friendly? I cut back on fat a lot, and I'll use ff evaporated milk in place of cream. Some recipes I'll cut back on the sugar. Also not use as much cheese as a recipe calls for.
2. Do you make meals special? (set table, linens, pretty plates, plating food prettily?) Usually lunch is on a paper plate unless I'm having soup or something that requires a bowl, but I have made it a habit to use real plates for dinner and make my meals a little fancier.
3. What recipe have you tried and like recently? OR What recipe would you like to make soon (new or old)? I have a package of fresh sliced mushrooms and I want to do a recipe using them. I have a couple in mind that I've made before, but maybe I'll try a new one this time.
4. FUN: Tell us what you like to read OR what your favorite type of music is OR something else about how you like to spend your free time. I like reading either historical novels or mysteries. I like several different kinds of music, classical, blues, jazz, some of the older 50's and 60's music, but my favorite is country, the older country music from the 509's on up through the 90's. I don't care much for a lot of the newer stuff. In my free time during the summer I like to be outside puttering in the yard or garden. Now in the winter I seem to be spending a lot more time on the computer.

Cathy, thank you for your kind words. (Should I mention that the couple next door, who bought a few years later than we did, have had three floods since moving in?)

AOTD: 1. Almost every recipe that I make I look to see how it can become more point friendly. Using less oil, low/nonfat dairy products, less sugar than the recipe calls for, whole wheat, etc. I hardly ever just look at a recipe and make it like it says.
2. I do keep a tablecloth on my kitchen table (no dining room), have an entire spectrum of fiesta ware dishes, etc. I do pick my plate color based on what color the food is.
3. I have been in a cooking rut recently. I need to try something new this week.
4. FUN: Mostly I read gardening, organizing or similar books. Just got my 2017 seed catalog and spent an enjoyable hour deciding what I absolutely needed to grow in my garden this year. Now, to cut back from everything I want to grow to what I have space to grow. Dreaming of spring.......
I have put all my CDs on my ipod so I can take it out with me when I am in the greenhouse or gardening. I listen to a lot of contemporary Christian music and jazz.
Cathy (and all our hostesses this past 7 weeks) Thanks for always stepping up. I enjoy everyone's take on their week and love the variety of questions/topics that are discussed. It is actually much easier to host on this new board than on the old WW board as you can edit and post links, etc.

1. Unless I am cooking for something special, I almost cook everything low-fat. When just cooking for DH & myself, I make almost everything SF, or low sps.
2, We always have placemats or a tablecloth on our table, I do have a descent set of dishes that we always eat out of. We may eat a sandwich from a paper plate at lunch, but dinner is always on a dish.
3 Just this morning, I have made a really old tried & true WW recipe. I made 0 pt veggie soup! I had cabbage, spinach, carrots, mushrooms, zucchini, & a few other things in my fridge that needed to be cooked, so I threw everything in a pot with a large can of tomatoes & seasonings. I just had a bowl of the soup for lunch, it was very good. Sometimes we forget how good something so simple can be.
4. I like gardening (until the weather gets too hot). I just bought 2 new books to read (going on a cruise the 29th). Bought the book about the forgotten Kennedy daughter, & All the Single Ladies. I usually like reading true crime stories. Truth is stranger than fiction.
Thanks to all those who host this board, I really enjoy it.

As for sandwiches, I am enjoying open face ones.
I love reading mysteries and cozies.
