NO EXCUSES

22. Microwaving tends to destroy fewer vitamins than conventional cooking methods. To get the most from microwaving, add as little water as possible to the food: a teaspoonful may be enough to prevent burning. Always cover foods while microwavingอพ this reduces cooking time and thus nutrient loss.

I don't cover potatoes or tomatoes or other things when microwaving. I have noticed that if I do cover them more liquid is preserved, though. Funny aside...mentioned baking potatoes in the oven to hubby and making more to use later and his comeback was that it was probably healthier than microwaving since microwaves might damage food...and us. Huh? Ah well...

He's not the only one who feels that way. I know people who will not use the microwave or eat anything microwaved. Personal choice. You have to feel good about what you eat and how you prepare it. Didn't realize that there was less nutrient loss.
