My cousin picked lemons off her tree yesterday and sent them home with me. They smell heavenly! But now I need ideas on how to use them...
I don't eat the meat of four-legged animals. I know about lemon chicken and squeezing lemon onto fish and vegetables (I used to have a roommate who introduced me to steamed broccoli with lemon juice squeezed onto it; delish!). I don't drink lemonade.
Any ideas for me? Thank you all in advance.

A lemon vinaigrette for salads, Add some lemon zest & lemon juice to the dressing for coleslaw (especially tasty if you add apples as well). Lemon ricotta pancakes. Combine some lemon zest with a bit of salt & rosemary (or your fav herb) & use to flavor veggies or potatoes. Add some to a bean dip to add freshness to the dip. Add to vanilla yogurt for a fruit dip. Add to a quinoa or other grain salad. Holly Gail, Enjoy your lemons.

Good suggestion, Cyndee, but for someone other than me... I'm not a sweets-lover, so I wouldn't make cake, muffins or pie regardless of ingredients... The only cake I like is flourless, and I've never attempted one. Although my mother baked really really delicious pies from scratch (just ask anyone who'd ever tasted one of hers, and she even taught me how to prepare and roll out the best dough), I've never ever been fond of pie. Muffins? no interest whatsoever. I do, however, appreciate that you took the time to consider my query and respond; thank you.
