Saved this recipe a while back...planning to make it this weekend, but it didnt say whether the chicken was cooked first. The casserole cooks for 50 min so you think it uses raw chicken chunks?
Cheesy Broccoli Chicken Casserole
3 cups cubed chicken 16 oz bag of frozen broccoli 1 med onion diced (about 1 cup) 2 cups RF shredded mozzarella cheese 1 tsp garlic powder 1 cube chicken bouillon, 1/2 c water (or 1/2 c chicken broth) 1 Tbsp olive oil 1/4 tsp pepper 1/4 c FF sour cream 1 cup FF ricotta
Directions : Grease a 9 x 13 inch casserole pan. Add broccoli, onion, chicken bouillon, water, olive oil and pepper to a medium frying pan. Cook covered for about 10 minutes. Stir occasionally. In a medium bowl mix the chicken chunks, garlic powder, sour cream and ricotta cheese together. Mix till blended. After 10 minutes of cooking the veggies, pour the broccoli mix into the bowl with the chicken. Stir until blended. Add 1/4 c of the shredded mozzarella cheese to the mix. Stir. Transfer your mix to the greased pan and spread evenly. Add the remaining mozzarella cheese to the top and pop that baby in the oven! Bake at 350 degrees for 50 – 60 minutes. Once the top layer of cheese is browned a bit it should be done. If you like your broccoli on the softer side bake until the florets are to your liking.

debsback not sure how I missed this was an actual question because the recipe looks so good I probably started drooling 🤤. I would think because it says "cubed" they mean precooked. Hoping someone who has made something similar will chime in.

I'm thinking precooked. Looks very yummy. I should write this down and try it

I'm thinking uncooked--50 min of cubes should do it. You could always cook a little longer.

I'm going with the majority here... because of the cooking time (50 to 60 minutes), I'm going to say uncooked too.

Any Chicken & Broccoli casserole dishes that I have made have been with uncooked chicken breasts although there are some recipes out there using precooked breasts.

Made it with cooked chicken, was good but didn't cook it for more than 20 min. Needs more color, maybe some diced red bell pepper or pimento. Next time I will try it uncooked. Very points friendly!
