Who mentioned this recipe last week? I made it for dinner tonight and DH and I loved it! So tasty and easy to prepare. Give it a try. You won't be disappointed. Skinny Taste Chicken Cordon Bleu

Linda, if you can get your hands on any of Marlene's "Eat What You Love..." cookbooks, perhaps from your local library, you might find lots of recipes that your husband wouldn't consider "torture" to eat.
Marlene is a dietitian as well as a mom, and she developed her recipes for a family that included the typical picky kids.
And because her step-daughter is diabetic, all of the recipes were developed with carb and sugar control in mind which makes them highly compatible with SmartPoints.

sullicat1 Make sure you pound the chicken breasts out fairly flat. That is how you can cook them quickly. Plus, they are then simmered for a few minutes in the lemon/dijon sauce. That helps finish off the cooking. The ham I bought was low sodium and it had a nice smoky flavor which added to the taste.

Marlene has a blog with some of her recipes at marlenekoch.com/
You also can sign up for emails from her. They aren't real regular but she has good recipes.
