Lightened Up Bohemian Chocolate Cake
I created this lower calorie, fat and carbohydrate cake using my Czech mother-in-law’s Bohemian Chocolate Cake as an inspiration. The end result definitely competes with the original. It is a one layer cake with delicious toppings, and you can decorate it as you like with your favorite fruit. The version that is most like my mother-in-law’s cake is actually the one using Truvia sugar blends, but I have also included the option of using regular sugars, as well. The Truvia sugar blend version is a bit spongier, whereas the regular sugar version is a little denser. Both versions are much lower fat than the original that calls for butter and real whipped cream.
Serves 8
Ingredients:
• 1/2 cup all-purpose flour
• 1/3 cup light brown sugar, packed (or 2 Tbs plus 2 tsp Truvia brown sugar blend, packed)
• 1/3 cup white sugar (or 2 Tbs plus 2 tsp of Truvia baking blend)
• 1/4 teaspoon salt
• 1/4 teaspoon baking soda
• 1/2 cup unsweetened baking cocoa (I used Girardelli’s)
• 1/2 cup plain low fat yogurt (I used Stonyfield Organic brand)
• 1 large egg (yolk and white separated), plus 1 additional large egg white
• 2 Tbsp milk (I used 1% low fat)
• 1 teaspoon vanilla extract
• 1/3 cup raspberry or strawberry preserves (I used Bonne Maman brand regular preserves)
• 2 cups of Lite whipped topping (I used Cool Whip Lite)
• 8 strawberries (or other berries) to decorate the top
Instructions:
1. Preheat oven to 350 degrees F. Spray a 9 inch cake pan (or spring form pan) with non-stick cooking spray.
2. In a large bowl, whisk together flour, sugars, salt, baking soda, and cocoa.
3. In a small bowl, whisk together yogurt, egg yolk, milk, and vanilla until smooth. Add wet ingredients to dry ingredients and whisk or beat until well combined.
4. In a separate medium sized bowl beat (with a mixer) the 2 egg whites until they reach stiff peaks. Thoroughly fold beaten egg whites into prepared cake batter until no egg white shows.
5. Pour or spread batter into prepared baking pan and bake for 20 - 25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely on a rack. [The cake may shrink slightly as it cools.] Carefully remove cake from pan onto serving plate or pedestal.
6. Spread top of cake evenly with raspberry or strawberry preserves, then top preserves with a layer of Lite whipped topping. Decorate whipped topping with 8 strawberries (or other berries or coordinating fruit). Refrigerate.

About Truvia sugar blends: Truvia brown sugar blend contains a combination of erythritol (a sugar alcohol), sugar, molasses, and Stevia leaf extract. Truvia baking blend contains the same, except no molasses.
