Going to Maija's last swim meet today. It's in Normal so we'll leave about 10:30. Have to tell you about the cutest thing that happened last night. Bailey was chasing Maybean and then they both stopped and started wrestling together on the ground and playing with each other! Bailey would roll onto her back and Maybean would box her around the mouth and then Maybean would roll onto his back and Bailey would nip at his paws. This carried on for about 15 minutes! Bridgette was so jealous she started barking at both of them!
Here's two chicken dishes and we love both!
Easy Lemon Chicken
1/4 cup flour salt and pepper 1/4 tsp garlic powder 4 thin sliced chicken breasts 3 tbsp extra virgin olive oil 1/4 cup chicken stock 1 lemon cut in 1/4 inch slices 4 tbsp (1/2 stick) butter 1 shallot finely chopped 1/4 cup lemon juice
put flour on a plate. In a small combine 1 tsp salt, 1/2 tsp pepper and garlic powder. Sprinkle the mixture on the chicken breasts and then dredge in flour coating them well. In a large skillet heat olive oil over a medium high heat. Cook chicken five minutes then flip and cook until golden and no pink inside. Put chicken on a plate. Add stock and lemon slices to pan, reduce heat to medium and scrape up browned bits if chicken. Add the butter and shallot and sauté for one minute then stir in lemon juice and cook for about 2 minutes. It doesn't say to do this but I put the chicken back in the pan while getting rest of dinner complete. Drizzle the sauce over chicken and top each piece with a slice of cooked lemon.
Potato Chip Chicken
6 cups Lays potato chips 2 tsp garlic powder 1/2 cup grated Parmesan cheese 1/4 tsp pepper 4 tbsp (1/2 drive butter) 3 chicken breasts halved to make 6 cutlets cooking spray salsa or sweet and sour sauce are optional
preheat oven to 400 and line baking sheet with aluminum foil or parchment paper crush potato chips into crumbs put potato chip crumbs in a bowl and mix in garlic powder, Parmesan and pepper (I put everything into a large ziplock bag shook it all up and then split the bag open.) You melt the butter and dip each chicken piece in butter and then roll in crumb mixture and place on baking sheet spray chicken with cooking spray. Bake until chicken is golden and no longer pink, about 30 minutes. This is where once cooked you decide if you want to top with salsa or sweet and sour sauce or serve as is.

Just a quick hello! Another busy day. We have a Halloween party tonight. It is a costume party. Should be fun. I may need to stop and pick up some makeup.

Sandy, thanks for the recipes. I hope Maija's team wins the swim meet. I think those two are going to miss each other when they get moved to their new house. You'll have to get them together for a play date!
Sharon, I hope your internet gets restored soon.
Later this morning I'm going over to my DD's house. We're going out for lunch and then going to an open house at a small wood products company. They make everything from wall clocks to plaques to wood ink pens and refrigerator magnets. They're an online company so this is the only day during the year that they're open to the public. You can take a tour of the facility to see how they make their products. They also have several small craft tables set up for kids.
Tonight is a ladies craft night at church. I'm not too crafty but it sounded like fun so I'm going.

Good morning, friends. We are getting the beginning of our big storm. Just rain now. I am going to the opera later, if my neighbors don't drop out, then to dinner afterwards. I would not be comfortable driving in this weather with my knee. Love the opera so I hope we go.

I am sitting in a chair bending my knee. I got it to 90 degrees, so I just need to do this more often. More diligence was needed.

Good morning. A little damp this morning and furnace should be repaired by noon. Think I will go grocery shopping and then home to roast some vegetables to heat the kitchen. I was given spaghetti squash, another squash that is not sold around here, but friend uses "different" kinds of seeds;. It is about three feet long and one of her smallest. I have some last year. Taste is much like butternut, but not quite as sweet. I will roast that with eggplant, green peppers and onion. Then mix with spaghetti squash and marinara sauce. All these vegetables were given to me. I also will pick up some farm eggs from my friend who owns the rescue and grows the different kinds of vegetables. I have three more stuffed cabbage for lunch today - then they are all gone. I don't make them very often.
Sandy the lemon chicken sounds wonderful. Mighty make that later this week. I bought crab cakes from Publix yesterday. Made fresh in the store and on sale for $2 each. I got four. Probably one or two with my vegetables this evening and the others will top a salad this week.
I gained .2 this week. Now I have to lose 1.8 to get to my most current low. I didn't walk at all this week because of lots of rain, crochet group, birthday lunch, allergies that felt like they were going to kill me. The cool nights have settled the allergies, but all the rain probably will give us more mold as it is going back into the 70's Sunday and Tuesday. Halloween should also be very warm. I liked the 50's and 60's much better. I am so ready for fall. The forecast is for winds along with the higher temps, so maybe it will still feel like fall. Trees are just beginning to turn and it will be very pretty in another week.
Ruth glad you will enjoy the costume party. I despise getting dressed for Halloween. I will wear a shirt, or a mask for giving out candy, but don't do the total costume. That is just not me and I am very uncomfortable with it.
worked on a poncho last night and need to buy some more yarn. Need to get to some sewing today and Monday and Wednesday before my surgery on Thursday. Hopefully I will be able to return to my projects within a week.
Hope Jane and Don are OK. May all of us enjoy this fall season and this weekend.

Dreadful news of mass shootings at a synagogue in Pittsburgh.
We will not have internet for sometime. When I left the subdivision I see the big box that held internet was destroyed completely and also posts and signs on both sides of the road. I hope no one was hurt badly.

Good morning!
Everyone sounds very busy! It is going to be very stormy and windy all day. The ocean is angry. I'm staying home and packing and cooking until about 6pm. Then I'm off to babysit Hazel since DD/DSinLaw are off to a Halloween Party. She'll sleep and I'll read, relax so it's a fine night.
The MGM Casino send me an offer of free hotel stays so I am going tomorrow. I'll babysit tonight and leave for MGM in the a.m. There is a fabulous theater and I have a $35 gift certificate hanging around that's good at Regal Cinemas. They have a great spa, too so I'll pamper myself. My DD took Monday off but I'll be back in time to pick up my 3 & 5 yr olds.
Today I'm making a double batch of Refried Pinto Beans which I eat daily with Salsa and Avocado on a corn tortilla. I have them in the freezer ready to pack for lunch and also a supply of Butternut Squash that I like to mix with 2 oz of low carb pasta for a tasty meal. I'm anxious to try this 'Healthy Red Lentil & Quinoa Curry Soup'. It has onion, garlic, carrots, celery, ginger, diced tomatoes, curry, broth and cilantro for garnish, too. Should be tasty!
For breakfast I roasted some potato and onion chunks and roasted two Trader Joe's meatless patties. A yummy breakfast on a stormy day.
Both of the Biopsies I had done at the Dermatologist are Squamous Cells. Both are small and one will be Mose and one treated cream, I believe. Also, my Vitamin D was low so I'm taking a weekly high dose pill and my B12 was low, too. AND as an after thought a cyst on my Liver was mentioned. This was detected back when I had my gall bladder removed and evidently it can be harmless. In researching, I read that a cyst on the Liver can cause discomfort in the upper Abdomen. That is what I had been suffering so I have requested to see a Gastroenterologist to pursue it. Thankfully, I'm a Chatty Cathy at the doctor's as it's always in conversation that I find out info that is stated 'matter of factly' that often turns out to be significant. Ugh! This is all so time consuming. I've started a small log book to keep in my purse and record info, appointment dates and tests so that when I see follow up doctors, etc I remember to address concerns! For someone on no meds, I am seeing a lot of doctor's.
Gail, I hope you get to attend the Opera and Dinner. Sounds like a fun day out!
Sharon, those dogs and kitty sure provide a lot of entertainment! Life will be boring for the dogs when she leaves! Enjoy the swim meet!
Vicki, that sounds like a very interesting Craft Fair!
Ruth, enjoy the Halloween Party! My daughter will be a Witch and DSinLaw, a Lion. They got Hazel an outfit like 'Dorothy' from the Wizard of Oz, complete with Red Shoes, but she wants no part of it! Ha!
Geri, maybe it's Delicata Squash. Wow! Three feet long! That's a lot of squash!
Jane, I hope things are going well and that you and Don are getting some rest! Hang in!
Sharon, hope your power is restored soon! I'll be glad to stay at DD's tonight since we often lose power at the Beach when it's this windy and rainy AND it's chilly!
Yikes, it's almost 1 pm. I did sleep until 9:30 am. It was great! I've been dawdling around, having tea, checking Facebook, etc. Time to get my cooking and packing done!

Hello again. WiFi is back and they must have worked diligently as it was wiped out. We were only with electric power twice for a few minutes each.
I am sickened by the horrible shooting in Pittsburgh today. The news reports 11 fatalities. It was a hate crime.
Dinner tonight is baked whitefish (haddock) my cole slaw and corn.

Greetings: i wanted to get the laundry going which necessitated a trip to no fewer than 3 stores to buy laundry detergent! But clothes are off and swirling in the washers.
Shortly will do the checkins for the plane tomorrow. We are making a list of things to do in Kauai. We have missed 2 for 2 chocolate plantation tours. Don't know if Kauai has chocolate.
Sharon. Just heard the news about the shootings. Stories to follow the report said.
Going to check on laundry status. Will post so i don't lose this!

The recipes sound good Sandy. They are a bit close to the QOTD. In this condo the owners have a few cookbooks. I've skimmed a few. Only one is a name cookbook. Oprah's person. Cook for life or something similar.
QOTD: Cookbooks. What message would you be sending with the cookbooks you've gotten rid of over the years? What stressed you saying about yourself and family with what remain? Is it accurate or do you need another one? If you collected cookbooks do you still?

AOTD: i got a couple of cookbooks when i first got married. I'd had a couple on a series by home ec teachers which were wonderful but now gone.
We have a lot of single item cookbooks. Fish. Berries. Chilies. A whole series on international cooking. And some really old ones. There are lots more. But we'r got rid of about half of our joint collection when we moved.
One of my favorites was one called the Quarter to Six Cookbook. It was quick dishes for nights i got home unexpectedly late and i didn't want to go with my plan. Sort of.. fast food at home before people stopped at fast food places! DS had a favorite recipe from it that needs to be updated. DDIL refuses to make it it is so unhealthy! I think im going to work on a new recipe for it for Christmas.
Not sure I still have the cookbook!

Football was not a winner for our boys. That was my feeling from the start. The other team is larger boys and have played in playoff's before. First playoff for our boys. I'm sure they learned a lot last night. The other team was a rather nasty team and ref's did penalize them several times.
Was in Des Moines all day for meeting. Begged DH to not burn leaves with no one here. DD called to check on him and he was not doing leaves but was on ladder putting tarps over screens on deck to keep the snow from blowing in. DD told him I would be mad and he said I would just have to be mad. Guess he is intent on doing his own thing. If he gets hurt he will have to pay the penalty I guess.

Karen E sorry about the end of the football season. Is your DGS a Senior? Sandy sad this was your last swim meet. We miss those days when we supported kids and grands. Happy times.

Karen C - cookbooks are dear to my heart. AOTD: I’ve given away half my collection of all the Taste of Home annual books. I kept the TOH Healthy Cooking ones. I kept all the groups and church cookbooks, although I rarely use those.
Mostly I don’t use cookbooks as recipes are online. Even the Taste of Home favorites.
