Here is the link to the original recipe that was the inspiration, and the actual recipe I cooked below lol. Instant Pot® Acorn Squash Stuffed with Italian SausageWhat I actually did: 2 acorn squash 1 pound 99% lean ground turkey breast 1 tablespoon hot italian sausage seasoning (or use whatever you like) 2 Tablespoons olive oil 1 clove minced garlic 1 small onion, diced fine 1 cup Ragu simply marinara(use whatever tomato based pasta sauce you like) 1 cup shredded part skim mozzarella Cut the squashes in half and pull out the seeds. Place cut side down in a microwave safe casserole with 1/4 cup water and cover with plastic wrap. Microwave on high for 4-6 minutes, or until they start to soften. (I did this in 2 batches because I didn't have a big enough casserole lol) Heat the oil in a skillet and saute the onion and garlic for a minute, then add the ground turkey and cook, breaking up as you go, until it's just turning color, then add the seasoning and cook on medium heat for 5 minutes. Add 1/2 of the sauce and simmer for a few minutes. Place a small spoon of the filling in each squash half, spreading on the bottom. Sprinkle 1T of the cheese and 1T of the sauce on that, then divide the rest of the filling into the squash. Bake, uncovered, for 20-30 minutes at 350f (until the squash is almost as soft as you like it), then top with the remaining sauce and cheese and bake an additional 10 minutes.
