Cream of Tomato SoupLow Calorie, Low Carb, Soup Difficulty: Easy Servings: 4 Source: Women's Institute of Library of Cookery Volume 3 Rating ✳️ ✳️ ✳️ ✳️ ✳️ Description As a rule, cream-of-tomato soup is popular with everyone. Besides being pleasing to the taste, it is comparatively high in food value, because its basis is cream sauce. However, the tomatoes themselves add very little else besides flavor and mineral salts. Ingredients1 cup canned pureed tomatoes, preferably San Marzano 2 cups whole milk 3 Tbsp. all-purpose flour 3 Tbsp. butter 1/8 tsp. baking soda, or 2 tsp. Splenda Granulated or to taste 1 tsp. salt 1/8 tsp. pepper Directions[The original recipe contains this instruction, intended to be followed using fresh tomatoes: Force the tomatoes through a sieve and heat them. By using canned crushed tomatoes, this step is unnecesary.] Make white sauce of the milk, flour, and butter. Add the soda or Splenda to the tomatoes, and pour them slowly into the white sauce, stirring rapidly. If the sauce begins to curdle, beat the soup quickly with a rotary egg beater. Add the salt and pepper and serve. My mom would make delicious tomato soup - made from her home canned tomato juice. Question: what would the soda do? And...if using soda you don't use Splenda or visa-versa?

@housemouse, I think it helps cut the acidity of the tomatoes
