I called these bombers because the cheese stuffed, bacon wrapped jalapenos are poppers. It just seemed a fitting name lol.
I did these low-carb, but I will include the low-cal/low-fat option in bold as well.
Jalapeno Bombers
For 4 servings:
4 whole fresh jalapenos, cut off the cap and de-seed
2 cheese sticks of your choice, break in half (I used Gouda, 1/2 stick per jalapeno fit just right) or 4-6 laughing cow cheese wedges (when I made these for WW, it took 1.5 wedges per jalapeno)
20 ounces ground beef (I used 85/15) or 20 ounces ground turkey breast mixed with 1 packet unflavored instant oatmeal
8 slices lean bacon (I used Wright brand thick cut) or 8 slices center cut bacon (I don't think turkey bacon would work)
Salt and pepper to taste
If you're using turkey: mix the turkey, oatmeal, salt and pepper and set aside for 20 minutes for the oatmeal to soak up some of the moisture.
Remove the bacon from the fridge so it can come down in temperature and become more flexible.
Prep the jalapenos by cutting the caps off and deseeding. If they're hard to work with whole, just cut them long-ways and work that way.
Stuff with cheese (if they're cut in halves, just put them together in the meat wrap step) and set aside.
Preheat oven to 350f.
Use a non-stick rimmed baking sheet or line with parchment or foil.
For the beef: season well with salt and pepper and form into 4 equal size balls; do the same with the turkey.
Put the meat in your hand, flatten slightly and make a well in the center, then place the jalapeno in the well and form the meat around it, enclosing it completely. Pack tightly.
Once you've done all 4, wrap each in 2 strips of bacon and place on the baking pan, seam side down.
Bake at 350 for 20 minutes, then turn the heat up to 400 and bake another 30 minutes. If the bacon is not crisp enough, broil for 5 minutes.
