Not strict keto because of the ingredients, and you could use ground turkey or chicken and low-fat cheese to make this WW friendly
(I've been making this for years because I'm too lazy to roll enchiladas lol)
Low Carb Enchilada Casserole
Makes 5 servings:
1 lb(s), Ground Beef, 80%
(or turkey, leaner beef, chicken)
1 cup, chopped, Onion
(finely diced)
1 cup shredded, Cheese, Mexican blend
1 container (1 1/5 cup (60g) ea.), Casa Fiesta Enchilada Sauce
(or your favorite)
6 Tortillas (42g), Corn and Nopal Tortilla (Susalia brand is 1.5 net carbs per tortilla)
All Spices are to taste:
1 tbsp, Spices, chili powder
1 tsp, Garlic powder
1 tsp (2.1g), Ground Cumin
0.50 tsp, Pink Sea Salt
0.25 tsp, Cayenne Pepper
Brown ground beef, onions and spices (I add 1/2 cup of water and let it simmer until the onions are tender).
Spray a small skillet with cooking spray and "fry" the tortillas for 30 seconds on each side until they're pliable. Cut 2 of the tortillas in half. Set aside.
In a 9" square baking dish spoon about 3T enchilda sauce and spread over the bottom.
Use 3 tortillas to cover the bottom of the pan, using the 1/2 pieces to cover the bare spaces(3 total).
Spoon half of the meat mixture on top, followed with 1/2 the cheese and 1/2 the enchilada sauce.
Repeat the layers but not the cheese.
Bake in a 350 oven for 30 minutes, then top with the rest of the cheese to melt.
IMPORTANT: let it stand for 10 minutes before cutting so it can firm up -20 minutes is better.
