I know at least a couple people here have made this type of overnight oats, but I didn't see the recipe in this list, so I'll add mine. The nutrition info includes the carrot and everything else in the ingredients. The portion is generous, in my view. I'm very hungry in the morning. The nuts could be eliminated, but they are so delicious!
Dry ingredients: 1/3 cup Rolled Oats 1/4 tsp cinnamon, ground 1/8 tsp allspice, ground 1 tsp chia seeds 1 tsp raisins, chopped
Wet ingredients: 1/4 tsp vanilla extract 1/2 cup fat free milk (based on Skim Plus) 1 tsp maple syrup 2 Tbs finely grated carrots (about one small)
Toppings: 1 Tbs Plain Low Fat Yogurt (I use regular, not Greek) 1 1/2 tsp finely Chopped Pecans (I pan roast them the night before)
Mix dry ingredients. Mix wet ingredients. Mix dry and wet ingredients together in serving glass/bowl. Cover and refrigerate overnight. Top with toppings and enjoy! One serving.
