Breakfast: toast spread with hummus and two cooked tomatoes on top + soy latte
Lunch: Rice with broccoli, cauliflower and taratour
Dinner: Peanut butter, jelly and nuts in pita wrap

Breakfast: hummus on toast topped with cooked tomato + coffee
Snack: Orange juice
Lunch: last of the broccoli and cauliflower in stir fry with onions and garlic on rice
Snack: Big bowl of popcorn with cinnamon and sugar
Dinner: (not vegan) tuna wrap with pickle

Breakfast: hot cereal topped with sunflower seeds and homemade jam on top and coffee
Cereal - half cup mixed oats, bulgur and farina cooked in 1 cup water - I sometimes mix this up in advance using any grains in the house that will cook in the same amount of time and take out what I need to make hot cereal in the morning
Lunch: 2 oz whole wheat pasta, 1/2 cup garbanzo beans mixed into onion/garllc/zucchini/eggplant sauce with Italian seasonings
Dinner: Not hungry...nuts

Breakfast: whole wheat toast topped with hummus and cooked tomato, orange juice, coffee
Lunch Out: Wrap made with Lebanese Flat bread that had: toom (garlic paste), hummus, lettuce, tomato, pickles and french fries inside
Dinner: Another wrap: taratour (tahini-garlic-lemon sauce), eggplant, lettuce and arugula
Snack: too many slices of dried pineapple

Breakfast: peanut butter on toast with cooked apple
Lunch: will be spending the day with friends...will do my best
After so may days vegan-vegetarian I have to say that today's options left me thinking...do I want this...really?
I looked over the food on the buffet and skipped the pork (a treat to many and the chicken (with potatoes - grabbed a few) and left the cheese except on the tyropitta BUT that was so salty I had trouble eating it...and ate some salad
So???
Wine tonight and a book, I think.

Breakfast: toast topped with an egg (wanted it so had it) and cooed tomato
Lunch: Lentil Chard Soup - big bowl full + pbj + orange juice
Lentil Chard Soup
1 liter water (quart)
1 cup lentils 2 medium potatoes peeled and diced 1 medium onion chopped 6 stalks chard chopped - stem and leaf) 1 head garlic - peeled and pouunded in mortar with pestle 2 large lemons - juice of salt and pepper to taste olive oil to drizzle on top
1. put lentils in water and begin cookinng 2. chop and juice and pound
3 add potatoes, onion, chard, 1/2 garlic and 1/2 lemon juice to pot and cook about 30 more minutes or until potato and lentils are soft 4. add rest of lemon and garlic when done and fire is off 5. Adjust salt and pepper to taste 6. Add drizzle of olive oil on bowl or into the pot
Snack: makhlouta (a mixture of grains and beans cooked in water with fried onions, a potato and two carrots)
Dinner: Big salad of arugula, whole wheat pasta and TVP - dressing olive oil, lemon, garlic, salt, pepper and sprinkled red pepper over the top

Breakfast: peanut butter on toast topped with sliced apple cooked in microwave + coffee
Lunch: Makhlouta leftovers warmed up and topped with chopped romaine dressed with ranch and drizzle of chipotle tobasco over all
Snack: Orange juice
Dinner: whole wheat spirals and TVP mixed into leftover zucchini, eggplant tomato sauce

Another Veganuary has ended. I went back through to see how many meals and snacks were not 100% vegan and perhaps 10% had something that was not vegan but only a couple of meals were not even vegetarian. Much easier this than last year.
