Hello All!
My name is Judy, and I'm from Toronto, Canada. I am married, and have 2 grown children --- my son is 30 and my daughter is 25. I'm a medical secretary and work for an orthopaedic surgeon. I can honestly say I love my job, and feel lucky to have it. If the weather isn't too awful I love to go for long walks, especially with my husband.
My weight has been an issue since my teens, and I struggle. I love to indulge in high fat/sugar/flour foods. I'm now looking at following the calorie density way of eating (very similar to Simply Filling), promoted by Jeff Novick, RD, and Chef AJ. Since I've been plant-based for nearly 8 years, the transition to calorie density will hopefully be easier. It means making vegetables and fruits the centre of all my meals, along with starches like sweet potatoes (can't do regular potatoes due to inflammation from them), beans/peas/legumes/chick peas, brown rice, oatmeal, millet, and quinoa. Not using oil, so water fry foods instead, and staying away from sugar, salt, and flour.
My weight started out at 308 lbs, and after becoming plant-based I got down to 240 lbs but got stuck there. The good thing was I got rid of my back and knee pain and was off all of my medications and I felt really good, certainly much better than I felt at 308 lbs. Then, last year we had some serious issues arise in our family and I did what I've done before to manage the stress: I ate. Lots of vegan junk foods: potato chips, cookies, processed meat alternatives (sausages, hot dogs, burgers, etc.) My weight jumped to 275 lbs.
Since beginning a week ago, my plan is to focus on my health with the calorie density way of eating. Weight loss becomes a side effect. I have to admit, weighing weekly, counting calories, etc., is not for me. It is too stressful, and I end up eating more instead of less. I've always used food to cope and remain calm, and my hope is that with not having to measure my foods, just eat vegetables and fruits ad libitum and have the whole food starches to keep me feeling full, I'll get to where I want to be: below 160 lbs. That is my ultimate goal.
I would love to hear from others, learn more about you, what's working for you and what isn't. I'm happy to have found this community of veg folks who are on their path to better health.
