It was an experiment but tasty. For one serving I used:
1/4 cup baba ganouj (could leave tahini out when making it and have it just mashed smoked peeled eggplant)
1 tomato, 1/4 green pepper, 1 small onion, 2 garlic cloves - chopped finely and cooked in a bit of broth 2.3 oz whole wheat spaghetti (or however much you will be eating for one serving)
Put baba ganouj in bowl, cook vegetables in pan while pasta cooks, add vegetables to bowl and mix with baba ganouj, drain pasta and add to bowl with sauce, mix and enjoy.
This would be good on rice or in bread, perhaps, too.

cathygeha , Thank you! I love baba ganoush (and eggplant) and don't add the tahini (used to be "no count" on SF and SFT)...

Tahini used to be zero points on Core/SFT or the baba ganouj without tahini? I really liked this and wish I had not used all of the roasted eggplant with tahini. I would make it again as a pasta sauce. I liked the baba ganouj sauce better than when I tried hummus sauce...

cathygeha , Tahini has a lot of oil/fat (from sesame, right?), doesn't it? I don't remember that it was ever zero or on the SF list... I meant numerous recipes for baba ganouj without tahini... I've never tried it with hummus, but it must be good...

Holly Gail, tahini is high in fat but supposed to be good for us...kind of like olive oil is good for us. It might work for one of the healthy oils? It is tasty stuff but in moderation...as with most things.

cathygeha , Only pourable oils are in the earlier category of no count on SF and SFT, so no, tahini can't be counted (under SF and SFT rules) as one of the healthy oils for no count. Ya gotta count tahini...
