It was an experiment but tasty. For one serving I used:
1/4 cup baba ganouj (could leave tahini out when making it and have it just mashed smoked peeled eggplant) 1 tomato, 1/4 green pepper, 1 small onion, 2 garlic cloves - chopped finely and cooked in a bit of broth 2.3 oz whole wheat spaghetti (or however much you will be eating for one serving)
Put baba ganouj in bowl, cook vegetables in pan while pasta cooks, add vegetables to bowl and mix with baba ganouj, drain pasta and add to bowl with sauce, mix and enjoy.
This would be good on rice or in bread, perhaps, too.
