What are your favorite herb and spices, and what do you use them for? Also if you want you can take a picture of your collection of your herbs and spices.

I've pretty much stopped cooking so I don't use spices much anymore. If my husband is involved with the cooking he'll sometimes use spices. At times I use to smell some of the spices, almost made me believe in aroma therapy. I found that if I take a whiff of chili powder my nose will run.

We like a jarred zesty cilantro sauce called Saucy lips. Packs a flavor punch.

* garlic (fresh) and onion go into just about everything with lemon juice (maybe not a dried herb/spice but often used * mint goes into some salads (tabouleh, fattoush, cucumber yogurt)
DRIED HERBS * basil - Italian dishes mostly
* oregano - Italian dishes mostly
* 7-spice: local mix used in stews and other dishes
* cayenne: sprinkled on spaghetti with tomato sauce or Mexican meals or IN a pot of it is something my husband is not going to eat - he doesn't like spicy
* cinnamon: on apples or in oatmeal
* ginger: Stir Fry
* zaatar mix (thyme with sumac, toasted sesame seeds and salt) - mixed with olive oil and spread on bread or as a dip
* others - have a drawer full of them but the above are most often used along with salt and pepper
Sometimes pick from the garden:
* bay leaves * lavender * mint * wild oregano * Thai basil * geranium * mint (two varieties) * maybe others...

There is a geranium with little purple flowers wither geranium shaped leaves. It is rose scented. Some distill it or cover and use sugar to make a syrup. I looked it up online and found this:
My husband has used the leaves in jams, I have made a beverage by putting sugar on them overnight then boiling and (I forget what exactly), it is used in flavoring desserts.

cathygeha, Thank you for answering. When I was growing up in Southern California we had a row of geranium plants along one side of our driveway. Never thought they could be used in food.

I love garlic, oregano, curry, basil, herbs de Provence and I love the Everything but the Bagel from Trader Joe’s. I put a laughing cow cheese on a rice cake and sprinkle everything but the bagel on it. I love many more spices but these are a few highlights!

cathygeha, Don't worry I am not adventuresome at all with food. In fact I have aversions to new or unusual food. Decades ago my husband and I were someplace that used flowers in salads. He ate the flowers and I wouldn't go near them. It frustrates my husband because I won't try new things.

Wouldn't the world be boring if we were all the same?
