It’s May, the month of getting warmer weather . Let's play and exercise outside more! And keep on eating healthy too! WELCOME EVERYONE anytime and yes you can walk/jog/run or combo, cycle, spin, swim, aerobic classes, elliptical machine, yoga, Pilates, strength train and core work too! Each week you set and post your own attainable mileage/minutes goal and strive to achieve it. Saturday through Friday is our fitness week with Saturday morning weigh-ins(WI). WIs are encouraged but optional. There is no judgement here. This challenge runs the month of May. Mo, I hear you! My weekend was spent in Brooklyn celebrating Tim's birthday and enjoying the new apartment! Lordy, we were little piggies!
The kitty drama continues. Poor Buddy, the stray I've been taking care of, showed up yesterday with a possible broken leg. For two years I've been trying to get him to trust me and we were making really great progress. Now that's all out the window. We tried to catch him to take him to the vet but were forced to give up although not before he bit the crap out of Jossy and me. So for now he's (Buddy) locked in Timmy's old bedroom until Jossy can drop off the humane trap he has. Jossy managed to contact the "the cat left behind" folks who set up a vet appointment for tomorrow morning -of course assuming we capture Buddy -although that trap of Jossy's should do the trick. The cat can enter it but can't leave. Of course, this whole nightmare could have been avoided if my regular vet had just given me something to sedate the cat!

Mo, for my cat lasagna you need:
Deb's Mexican Lasagna -salsa -corn torillas (cut/torn up) -cooked black beans -black olives (sliced) -grated cheese (I like a combo of cheddar and monteray jack)
There is no formal recipe. In a deep sided serving dish or bowl layer as follows: some salsa in bottom of dish then: 1) a layer of tortillas, a layer of salsa, a layer of black beans, a layer of black olives, a layer of cheese; repeat 1) for a second layer; then complete with a layer of tortillas and a little more salsa on top. Microwave until cheese melted and cooked through.
It's not an exact recipe! But really tasty! For variety or to use up leftovers, you can add a shredded meat of some kind on top of the salsa but before the beans (we've used shredded pork and shredded chicken).

I did not do well today. going to eat 1500 calories 5 meals. high fiber oatmeal. I have to save money and this is the cheapest I can go. 9 boxes cost 27 dollars and that's enough for a week.
