Cook Time: 16-18 min | Servings: 12 servings
Ingredients:
1-1/2 cups All-Bran cereal 1 cup low-fat buttermilk 1/2 cup unsweetened applesauce 1/2 cup granulated sweetener 1 large egg 1 tablespoon canola oil 1 tablespoon molasses 1 cup all-purpose flour 1 teaspoon baking powder 3/4 teaspoon baking soda 1 cup fresh or frozen blueberries
Directions:
- Preheat the oven to 375°F.
- Line 12 muffin cups with paper or foil liners, and lightly spray the liners with nonstick cooking spray.
- In a medium bowl, whisk together the first seven ingredients (cereal through molasses). Let set for 5 minutes.
- Using a large spoon or spatula, stir until the dry ingredients are moistened. Gently stir in the blueberries.
- Spoon the batter evenly into the prepared muffin tins, filling each cup two-thirds full.
- Cool for 5 minutes before removing to a wire rack.

I saw this recipe posted on the other board and they are very good. I freeze them in freezer bags and just take one out and nuke it, love them...also used chopped apple with cinnamon. Thanks for sharing this recipe!

I made these this morning. I have a lot of blueberries in the freezer and like recipes in which I can use them. I think the points are reversed though. I ran the recipe through the recipe builder and it came out to 3 SP. I would guess 2 PP would be right for that count since it has bran in it.

You're right that the SmartPoints value is 3 instead of 2. But the PP value is also 3. I just checked the original recipe. When I entered it into Recipe Builder I left out two key ingredients (this is my opportunity to say how much I hate the new Recipe Builder!). I also had the fiber and sugars reversed. I've edited the recipe to show the correct points and NI. Thanks for catching the error.

I thought I would share a recipe that is a staple for me, especially in the summer when my garden is producing. Miracle Turkey Chili Makes up to 20 cups at 1SP per serving but usually I get about 12 cups and count as 2 SP 16 ounces 93% lean ground turkey 1 cup diced raw onion 5 cups diced zucchini or a mixture of that and yellow summer squash 1 1/2 cup canned black beans, rinsed 2 1/2 cups diced celery 1 1/2 cups diced bell pepper 4 cups canned diced tomatoes 2 tsp minced garlic 2 Tbsp. chili powder 1 tsp dry oregano 1 tsp cumin Cook turkey in skillet till no longer pink, breaking up into small pieces. Add to crock pot along with vegetables and spices. Cook on high for 2 hours and then on low until all vegetables are tender. The recipe is supposed to make 20 servings but I don't get that many once the vegetables cook down. It fills my 5 quart crock pot to the brim though when I put it all together to start.
