Checking...busy today (again) though not sure what I have to show for it!
Protein: I sometimes worry I get enough BUT do try to get in the GHG's and think that helps. I will (I think) be doing Core in August and that means watching the GHGs and t he dairy alone will help with getting in the protein.
As for balanced meals...I think "the plate" and do my best to have a protein, carb, fat and that means fruit/veg/grain/legume or dairy or egg/tsp oil at most meals and then I play with t he mix-match to make a meal.
Today I made a tasty lunch. Boiled potatoes then peeled and chopped, added in leftover bite sized boiled green beans cooked yesterday (drained) and a can of tuna with garlic, lemon and tsp or two of olive oil. Salt & Pepper...it was scrumptious! Hit the mix-match goals and probably also helped with the protein requirements.

Hello all,
I always try to get in some protein at every meal. I cooked a nice pot of white beans a couple of days ago, they are really delish. Plan on working some of them in again today.
No real plans for today, have to go soon & pick up our little doggie, Jet. He had to spend the night at the vet's last night. The vet called & said he is much better this morning, so we are going to pick him up!! Yaaah. Church this evening & that's about it for the weekend.
The ideas of the tuna with the potatoes & green beans, sounds really tasty.

Answering yesterday question... I use olive oil almost exclusively. I think I have a bottle of sesame oil that I need for some recipe, but not sure exactly where.
For butter, I use Brummel and Brown yogurt spread and keep a butter frozen just in case I make something calling for butter.
I looked at those links. I have alot of those items in my pantry (except tuna which I dislike) but don't always think about using them as the basis for a meal.
I made a potato salad last week for work lunches that was actually half cauliflower/half potatoes. Really tasty and less calories than regular potato salad.

bmazzo, Beverly, glad Jet is doing better & coming home. Scary when they're not feeling well. I think I get enough protein. I'm working to add more plant based (learning to like beans!) and being aware of other foods that are protein sources. I do have to watch myself because I like dairy foods - such as yogurt and cheese - not to go overboard with those. I really like the grocery list/meal ideas link. I realized I've heard / seen the word "tapenade", but didn't really know what it is. Googled and...I think it sounds good! Question - does anybody use canned salmon? I've tried this product: chickenofthesea.com/products/wild-catch/premium-alaskan-salmonI mixed it with some mayo, seasoning (can't remember exactly what), and put it on Triscuit crackers, but I was wondering if there's something better out there. Either a different product or a way of using it? I like the idea of canned /shelf stable, just because it makes it easy to have on hand. (and I copied your lunch description into my recipe files; thank you!) jan , Jan, thanks for the rice bowls recipes link! jasimons , Judy, I haven't seen that salmon item. I've purchased canned wild caught salmon and have enjoyed it, usually cold like salmon salad (sort of) but have considered using it to cook something, like salmon patties. Groton is a name I've known for quite a long time, and although I haven't seen the particular item you linked us to, I've been happy with the frozen options I've tried.

I probably get enough protein. I don't always have it at every meal but I have something almost every day. I like canned salmon, in fact I like it better than tuna. I use it for sandwiches, in salads, salmon patties, and sometimes just to eat alone. I also like salmon pieces grilled, "fried" (cooked in a pan with a spray or two of olive oil), and baked. I try to eat fish at least a couple times a week.
Yesterday I had coffee with a neighbor, went to town for Mass and groceries, and in the morning replanted chives and thyme that I saved from a flower bed back into that refurbished flower bed. Today I'm going to bake a loaf of bread and water my corn, potatoes and squash. I probably won't do much else. I have a book I'm reading so that will likely be among the things to do.

My mom used to make the most delicious salmon patties, when she , couldn't afford the more expensive canned salmon, she would buy the cheaper canned mackerel. I am not a fish eater, but I loved those croquettes! Of course, they were rolled in egg mixture & bread crumbs & fried. Now, I try to replicate them, using less breading & very little olive oil. They are ok, but noting like the ones mom made. I suppose in those days, the only salmon that we had access to, was the canned.
