Breakfast Bread Pudding with Sauce:
Pudding:
8 slices Sara Lee 45 Calories & Delightful 100% Multi-grain bread
3/4 tsp. salt
1 T. ground cinnamon
1/2 cup Truvia Sweetener (in the jar, not baking)
3 doonks (scant 1/8 tsp.) Stevia extract powdered sweetener
1 tsp. maple extract
1/2 cup liquid egg whites (= 4 egg whites)
3/4 cup (170 g) plain fat free Greek yogurt
1/2 cup Silk Unsweetened original cashewmilk (or any brand)
3 T. (30 g) raisins
Sauce:
1 1/3 cups Silk Unsweetened original cashewmilk (or any brand)
1/3 cup (16 tsp.) Truvia Sweetener (in the jar, not baking)
2 wedges The Laughing Cow Creamy light Swiss spreadable cheese wedges
1/2 tsp. vanilla extract
1/2 tsp. (scant) caramel extract
1/2 tsp. molasses
1β8 tsp. (2 large pinches) salt
1/4 tsp. Glucomannan Gluccie Fiber Supplement (or xanthan gum)
Instructions:
Pudding:
Preheat oven to 350Β°F and spray an 8x8 baking dish with coconut oil flavored nonstick cooking spray (or other flavor).
Chop bread into small squares, add to a medium bowl, and combine with the rest of the dry ingredients, including raisins, except powdered Stevia.
Add all wet ingredients & powdered Stevia to another bowl and whisk with a fork until smooth.
Pour wet mixture into the dry mix, stir everything together, and add to your baking dish. Bake for 35β40 minutes and while it is baking make the sauce to top your pudding with it.
Sauce:
Add everything but the Gluccie to a small saucepan and set to high heat, whisk well.
Once it starts to bubble, reduce heat to low.
Whisk in Gluccie and let simmer for 3 more minutes.
Notes:
Breakfast Bread Pudding: 1 serving = 1/4 recipe, 4 points purple.
Bread Pudding Sauce: 1 serving = 1/6 recipe (~ 1/4 cup), but 1/4 recipe is still only 1 point purple.
Pudding with Sauce: 5 points purple.
