Ingredients:
2 cups all-purpose flour 1/3 cup granulated no-calorie sweetener* 2 teaspoons baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup fresh blueberries 1 cup low-fat buttermilk 3 tablespoons margarine, melted 1 large egg 1/2 teaspoon almond extract 2 teaspoons granulated sugar
Directions:
- Preheat the oven to 425°E Lightly spray a cookie sheet with nonstick cooking spray.
- In a large bowl, mix together the flour, sweetener, baking powder, baking soda, and salt. Stir in blueberries; set aside. In a small bowl, whisk together the buttermilk, margarine, egg, and almond extract. Pour this wet mixture into the dry ingredients, and stir just until moistened.
- Drop by heaping spoonfuls (about 1/4 cup) onto prepared baking pan, making 12 mounds. Sprinkle scones with granulated sugar.
- Bake for 12 to 15 minutes, or until lightly browned. Transfer to a wire rack to cool slightly before serving.

I also made them and enjoyed them. At the time I did have buttermilk, but usually I don't, so I use the old 1 cup milk w/ 1 Tbs lemon juice or vinegar substitute (let milk w/vinegar or lemon juice sit 5 mins before using). I usually use lemon juice.

I make one that's similar but I'll add tablespoon of lemon zest to the batter. I drizzle a little of a powdered sugar/milk glaze atop them once they are out of the oven and I'll include a little lemon juice and zest in the glaze.

I absolutely freeze them. The only way they are diet food is if you freeze them and thaw/heat them one at a time. Otherwise you'd have to eat them all in a couple of days to keep them from going stale or bad!
I have a Philips Air Fryer and usually put one into it at 390° and let it go through the pre-heat cycle. When pre-heat is done, the biscone is usually ready, nice and crunchy on the outside. I generally undertake them the first time so that reheating them doesn't overbake them.

I made these last night and are they ever good! I did eat 2 and froze the rest. Think these may become a regular dessert at my house...
