Cereal again, it seems to be my favorite. It is just so cool & refreshing early in the morning.

Hi, Betty, Beverly, and everyone.
Cottage Cheese Scrambled Eggs: nonstick cooking spray 2 eggs, beaten ~ 1/4 cup fat free cottage cheese pinch salt & pepper
Spray skillet. Preheat over high heat. Turn heat down. Add beaten egg and cottage cheese. Sprinkle with salt & pepper. Stir. Turn heat off. Stir. Let sit in skillet.
Grace Oat Pumpkin Muffins 12 muffins (0 points - purple, for 2 muffins)
3 3/4 cups (300 g) uncooked old fashioned oats 1/2 tsp. salt 2 tsp. baking soda 3- 4 T. Truvia 1 tsp. ground cinnamon 1/2 tsp. ground ginger, optional 1/4 tsp. ground cloves, optional 1/2 cup (113 g) plain fat free Greek yogurt 1 individual container (~ 1/2 cup) unsweetened applesauce 1 1/2 cups (366 g) canned pumpkin (NOT pumpkin pie filling) 1 egg, beaten 1 tsp. vanilla extract 1 tsp. molasses 2 T. Mrs. Butterworth Sugar Free Syrup
Preheat oven to 375 degrees. Spray silicone muffin liners with nonstick spray. Put in muffin tin. Mix all ingredients and put in muffin cups. Bake at 375 degrees for 25 minutes, or until toothpick comes out almost clean.
Notes - slightly revised from Vickie Hull-Brinkman on Facebook - I sprinkle top of muffin with a little Truvia, before serving. Swerve Confectioners would be good, too. - Instead of gingerbread spices and molasses, may top each muffin with 1/4 tsp. chocolate chips. Still 0 points (purple), even for 2 muffins.
