I am trying a new recipe from Cleveland Clinic today. Iggy hates mac and cheese but I love it. I have not made it in awhile because of the calories and fat. This is a healthier version: Butternut Squash Mac & Cheese
I’ll let you know how it turns out.

Recipe: 4/5 Excellent flavor.
Skews sweet because of the squash. Next time I’ll add some heat, maybe some cayenne pepper. This time I just splashed some green Tabasco on it.

Thanks for the start, Chele. Glad the mac'n'cheese recipe was good. The heat would cut the sweetness. Another option might be using some California Balsamic Sweet Heat. I know what you mean about the high fat content of most recipes. I have a few vegan recipes that are good and are lower in fat, but then it's not real cheese. I'll probably be breaking out those recipes soon. I don't have a sandwich on the menu for today, but do for tomorrow. I found a new seed butter that I really like that's made from sacha inchi seeds, which are native to Peru. I'll have some on a couple slices of sprouted bread in the car coming home from Osteo. It has a better nutritional profile than any of the "healthy" nut butters. The only place it's available is from the company that makes it. Are you caught up on 9-1-1? Looks like only a couple of episodes left in this partial season.
Linda, congrats to Bob on the good doctor's report. Did the doc tell him to maintain his current weight? They didn't give you any idea what may be causing the high potassium level? Are they going to do more tests? Hopefully it's a false positive. Good luck with the non-time change. We aren't so lucky. Apparently the problem for the rest of the country is that federal law only allows staying on standard time and all the states want to move to daylight time. Why can't Congress do this one thing?
Kathy, I agree on the Claire/Clara coincidence. Hair styles are kind of similar. I remember Blink. It was a good episode. My favorite (so far) has to be Smith and Jones, where the David Tennant Doctor met Martha Jones when the hospital got relocated to the moon. I think it was the first episode with the Judoon.
Not much happening here today. Dale helped me move the living room furniture so I could vacuum under it. I also baked a loaf in the Zo. Dale wants the tried and true white bread I've been making for years and doesn't want to take a chance on anything else. So I haven't experimented yet. We have a cloudy afternoon and may have some rain tonight into tomorrow. I'm trying to figure out Christmas, given DN#1 has a new wife with a daughter and the new grandbaby. I also feel kind of bad that 4 of 5 nieces and nephews have at least one kiddo, so I spend a fortune on them. But the niece and DH with no kids get shorted every year. I wish it didn't have to be so complicated.

I hear your Xmas pain. Brother has four kids with 8 grands and one on the way. I do not even get to see these people since COVID because here they are not vaccinated , nor 4 parents. If we went, it would be 6 vaccinated out of 17. Bad odds. the military wife niece had two little boys years ago and dad was either in Iraq or Afghanistan, so I sent German advent calendars with chocolate…oops,became a tradition. So the three kids who live here now, ,even though boys are in high school , still get them and I better have Amazon do it soon.
No grands back east, but four adult nieces and nephews and rest of family.All get gifts. I pretty much do gift cards now except Bob's sisters and the one spouse.
Nota fan of squash in Mac and cheese. I use the old old Betty rocker recipe with layers of sharp chopped cheese and cooked mac, the low fat milk dumped over it. Bakes up great.
Anyone hear from Denise? Worried.
DH an d I both take losartan which is potassium sparing BP med. but we had been eating a lot of cantaloupe, dates, and such with proportionally less food with it on his diet. It is now another good reason to not to bake French fries. Potatoes and tomatoes are high…wonder if it is nightshade family.
warm week but nice. Whatever causes allergies loves it. Dog needs Apoquil lately.
Got the sleeve caps for the museum chair unhemmed ,pressed out and turned over and hemmed on other side. The color is not faded on that side and fabric looks much the same.it had been reupholstered in the late 50s. So the Victorian chair can go back to the historic house where it once lived with people years ago. Not my kind of work, but they lost an awful lot of volunteers (mainly old) and the sewing person was among them. I like to think 50 years after I'm dead and gone people can still see that chair. They can also research my files archives about that crazy pandemic back in the 20s and the wacko AZ audit to see what we did. Daily articles carry so many more interesting details than books.
Found a new good way to air fry eggplant for parmesan casserole. Peel it, slice into 1/3inch, dust with flour, dip in frothed egg white, then dip into panko with parmesan cheese, garlic powder and a bit of olive oil. Bake on racks over pans …being sure to coat rack with oil and spray tops of eggplant. 475 at 25 minutes gives crunchy golden slices you could eat by themselves.
Made the rest of casserole layering sauce and mozzarella. Will heat it later until cheese bubbles. We Miss upstate NY Italian food from the Albany area.

Chele, thanks for the start. The mac & cheese sounds good. My favorite sandwich is grilled cheese, although I haven't had one for a long time. I also like a toasted deli ham or turkey with cheese on whole wheat or a plain peanut butter sandwich. Karen, Smith and Jones was a good episode and great way to introduce Martha. I guess we'll find out on the Claire/Clara thing. Maybe they're just messing with us. Florida already has a law in place to put us on permanent daylight saving time but it needs Congress to amend the current law to allow it. Good luck with that. I think it would get confusing if we had a mix of states doing one or the other, so my vote would be to just get rid of it. Linda, you and Karen have complicated Christmas lists! We've never exchanged with cousins and their kids and since I just have one nephew, it's pretty simple. That's really cool about the museum chair living on for people to see. I'm sure your files will be appreciated too. I haven't heard anything from Denise, but she had been posting less frequently.
