GOOD MORNING, PENNY HOW TRUE THAT SAYING IS.. DAYLE,I AM DOING GOOD. BACK TO WALKING WITH MY CANE AND ABLE TO HELP MYSELF MORE.
I THINK THIS WAS AS HARD ON DON AS IT WAS ME. course I loved being pampered,can't go on forever.sigh,sigh. yes I was getting tried of just sitting and tv.so why so why am I STILL DOING IT?
YESTERDAY WE WENT TO TARGET PHARMACY,SUCH A LONG LINE AND I had to go sit down,Don stayed in line and must have been for a half hour to get my pills.
have to go back today for my probotic,who ever waited on Don was not so smart. keep looking for mgs when it says 30 count on the bottle.this guy is a pharmiast.
then it was lunch at CULVER'S,WE WERE GOING TO GO TO Kohl's TOLD DON they can wait so we went To JO ANN'S. i bought some black and white fabric,40% of each one so I LUCK OUT. HOPE TO MAKE A SCOTTY DOG QUILT,MAYBE BABY OR YOUTH SIZE.when CAN GET TO IT WHO KNOWS.
MY heart goes out to the southern states who got hit by the big snowstorms.
also to OUR Flordia friends who may be hit bytornadoes. phyl

Good Sunday morning. BRRRRRRRRR cold here so will be another inside day. Will watch the church service on live stream which isn't as good as being there but better than going out in the cold.
Got the baby blanket finished yesterday so another project done. Think I'll donate it to the Parkinsons benefit if they have one this year. Have plenty of yarn left so will make another for my new great grandson due in May. Have to do a little cleaning today. Some of the neighbor ladies are coming for coffee tomorrow and my house is a bit messy. Not much else planned. DD still in California and I don't think DS will come over. Something going on with him and he doesn't want to talk about it.
Hope everyone in the path of the storms in the west and on the east coast stay safe. Looks like a bad one.

Lin, I’ve got to tell you last night’s mushroom Galette sounds really, really good. I am a very big mushroom foodie. But would you mind stopping by to make it for me? Just too much work and I know I’d screw it up somehow…….. That with a light vegetable soup would be nirvana for me…..
Phyl glad you are getting around and with less pain. Don has been a “really good husband” during this whole thing. A definite keeper!
Marilyn the letters I wrote yesterday were all actual letters. I use to write them by hand, but now my handwriting is so bad, I type them out on the computer using fancy type face which at least makes them seem a bit more personal then e mails. The nieces, nephews and friends all seem to like getting snail mail from me, so I continue in the old manner. I don’t know about anyone else, but I find it difficult to write a letter, note etc without using the computer these days. I can write, edit, and rewrite very quickly and it helps me to formulate my words and thoughts that way. It also stops me from saying something stupid before it does some harm as well.
Penny your snow saying is pretty spot on, but it doesn’t change the fact that it’s still my least favorite form of precipitation. I have no idea what the weather coming in tonight is going to be – snow, sleet, freezing rain, but it’s supposed to get ugly – with high winds that’s for sure. Did I mention how grateful I am that my heat in the house is fixed and chugging along nicely. Lily ate all of her breakfast, and I’m hoping she gets her dinner down before it starts. Not that she couldn’t stand to miss a couple of meals……
Well today is Sunday – wash day and cleanup day, so I must get busy.

Dayle, it was easy. Your miniatures are so hard!
Bought 2 packs of sliced mushrooms , sliced onion and you could used garlic precut in jar. Once the onions were softer, tossed mushrooms into the big pan and let it cook.
next day I microwaved them for a minute. I used ready made refrigerator pie crust. Plopped it in some parchment paper on a cookie sheet and it it easy to turn up the two inch border and squeeze it together where it pleats as you go around. Brushed a bested egg with water on edges and into the oven! Cheese you like goes on after it bakes 40 minutes…or leave it off. 4 nice slices that are filling. We each had one.

Oh my gosh, can you smell those cinnamon muffins? I did not put any nuts or raisens in them, as I don't like raisins and DD is allergic to nuts. figures the cinnamon and nutmeg would be enough. YUM. Might just have one warm. Just took them out of oven. There was some prep work to do at first but the rest went easy. I don't usually have buttermilk on hand and did make my own but they said to use lemon juice but I am going back to my vinegar in milk, it seems to work better. Also have the soak the old fashioned oats in the buttermilk first for awhile. Also did melt the butter ( but used margarine as I had two sticks I wanted to use up--- hardly ever buy it. ) Thought pretty good idea as said better to mix by hand.
Like Dayle says we don't have a clue about the storm either. Will let you all know when I do!! I am hoping for snow but then you all know that and with it comes Joy!! But then I don't have to drive in it, and my lawn guy comes to plow me out in case someone wants to come visit with me. LOL I do the front porch and do have the Ice melt to put where it needs to go. I am good! Did not stock up for a month's worth of groceries.!!! DD brought me lettuce today just because she gets the stuff I need at Aldi's. It looks really good, firm head. I do not buy the bags anymore as they always have a recall on them. I did like the spring mix and the romaine and sometimes I still get romaine at my grocery store. When I go!!
It is a bit warmer today 28° but wind has picked up and think I am going to take my solar snow flakes wind chimes down and also the Let it Snow flag. It is flying pretty good right now. I like a few mushrooms but hardly ever get them. I do use them in my beef stroganoff. Hardly ever get them on my pizza but some one else wants them I am okay with it. guess I like the button mushroom best and liked them stuffed as an appetizer. With bread stuffing not sausage. ( my own recipe)
Well I am off to have one of those muffins for my lunch!!

three recipes in a row were hits with DH! On a roll.
Here is today's supper, a Skinny taste recipe . I made the sauce ahead, easy …just some chopping. the gnocchi boils in three minutes! I have managed to keep the basil from frosting so far with night covers, so Will go ahead and use it.
No fan of taking off stems of spinach. Hate stems. So I got a little bunch of regular stuff and just cut all the stems off at once and chopped it..
By the way, I never need more than a Tbsp of tomato paste, so I put tbsps of it on parchment paper and then into a ziplock bag and freeze it flat. When I need it, I just get one of them.
Cheesy Eggplant Caprese Gnocchi Skillet
PREP TIME: 10 mins COOK TIME: 15 mins TOTAL TIME: 25 mins
Cheesy Eggplant Gnocchi Caprese is made with diced eggplant simmered in a garlicky tomato sauce with gnocchi, spinach, melted bites of fresh mozzarella and fresh basil. Ingredients
16 oz package Delallo gnocchi (or gluten-free gnocchi) 1 tbsp olive oil ½ large onion or 1 small onion (chopped) 1 tsp kosher salt 1 lb eggplant (diced) 2 cloves garlic (crushed) 5- ounce container baby spinach 1 tbsp tomato paste 28- oz can San Marzano Style crushed tomatoes. (Works fine with diced canned ) 6 leaves fresh basil 6 oz small mozzarella cheese balls…called Pearl and cones in a little package like a ball of them Instructions
Bring water to a boil, cook gnocchi according to package directions and drain. Meanwhile, set a large nonstick skillet over medium heat and add the oil. When the oil is warm, add the onion, eggplant and salt to the pan and saute for about 3 minutes, or until it begins to soften, then add the garlic and cook until fragrant, about 1 minute.
Gradually add the spinach, stirring until it wilts. Once it’s all in the pan, saute for 1 to 2 minutes, or until it cooks down.
Push it to one side of the pan with your spoon and add the tomato paste, stirring until it smells lightly caramelized and toasty.
Pour in the can of tomatoes and decrease the heat to medium. Cover the pan and cook for 5 to 6 minutes, or until the eggplant is tender.
Add the cooked gnocchi, place the mozzarella on top, cover the pan and cook 3 to 5 minutes, or until the mozzarella is melty.
Garnish with torn fresh basil and serve.
Serving: 11/2 cups, Calories: 436kcal, Carbohydrates: 66g, Protein: 15g, Fat: 11g, Saturated Fat: 5g, Cholesterol: 30mg, Sodium: 900mg, Fiber: 7g, Sugar: 5g

The muffins are blah!! dry and needs more cinnamon . Another recipe in the shredder. Will stick with my Cinnamon streusel cake from a box. WE all love it, especially warm. I am done trying recipes, going to stick with what I know is good. I did freeze 6 of them but rest went in garbage. Not even throwing them out to birds. They will be covered up with snow and and soggy in no time.
Ready to just relax with my book. Dishes all in dish washer and kitchen all cleaned up.

Hi I enjoyed reading everyone's day. I pretty much did nothing. We watched church online and then I basically did nothing until tonight when I forced my self to walk a mile on the treadmill in the basement. Boring, bur listened to Elvis while walking which helped. And I finally poked my nose outside and it's above freezing!
