Recipe Ingredients for Low Fat Low Sugar Cranberry Orange Muffins

1 cup whole wheat flour (I used 2 cups whole wheat pastry flour instead of this and the above flour)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup sugar (I used 1/4 cup Truvia baking sugar mix, which is the equiv of 1/2 cup sugar)
1 large egg
1/4 cup unsweetened apple sauce
2/3 cup orange juice
2 tsp grated orange zest
2 cups fresh cranberries (chopped) (I pulsed them a couple times in my food processor)
Recipe Directions for Low Fat Low Sugar Cranberry Orange Muffins
Preheat oven to 400F
Mix dry ingredients.
Mix wet ingredients.
Mix dry and wet ingredients.
Fold in cranberries. Spoon or scoop (using ice cream scoop) batter into greased/PAM sprayed muffin tin or paper muffin cups. The batter is sort of thick, almost (but not quite) as thick as cookie dough.
Bake for 16~18 minutes.
Serving size is 1 muffin. Nutrition info based on original recipe above.
