Eggs—Another Option
Buying eggs isn’t as easy as it used to be. The options aren’t just medium,large,and jumbo.What should you buy?
Brown (versus white),organic,fertile,or free-range eggs:there are no nutritional advantages.For a single egg,each has about 10 percent of your day’s protein need.Eggs supply vitamins A,D, and B12, as well asluteinandzeaxanthin;and about 215 grams of cholesterol and 5 fat grams in a large egg.
Other options if they match your health needs: • Cholesterol-free liquid eggs (egg substitutes): 1⁄4 cup equals 1 whole egg. Sold in cartons, they’re made from egg whites. (Yolks contain the cholesterol.) • Nutrient-modified shell eggs: some with more heart-healthy omega-3 fatty acids, some with less cholesterol. Read the Nutrition Facts.

Berry Silken Tofu Cheese Cake 1⁄4 cup graham cracker crumbs (4 21⁄2-inch squares) 3⁄4 cup egg substitute (equivalent to 3 whole eggs) 10 1⁄2 ounces silken firm tofu, drained and cubed 1⁄2 cup sugar 1 tablespoon lemon juice 1 teaspoon vanilla extract 1 cup nonfat ricotta cheese 1 cup berries or other fruit
Preheat oven to 325°F. Spray bottom of an 8-inch springform pan or pie pan with vegetable cooking spray. Evenly spread graham cracker crumbs on bottom of pan. Blend remaining ingredients (except berries) in food processor until smooth. Pour into pan, bake 35 to 40 minutes. Remove from oven, cool 15 minutes at room temperature. Refrigerate. Cut into 8 slices. Top with berries. Makes 8 servings. Source: United Soybean Board

I have tried a few tofu based desserts and not been impressed - as for eggs - we buy what is available or grow our own Karen: I think that this time of year many people are more tired. Not sure if it is the weather, time for a winter break or what. Cindy: Your menus always sound healthy and with the vegetables and giving blood would know if your iron was lower than it should be. Bob: Hope your daughter is doing okay at home and her chemo is going okay. Glad she was not caught in the snowstorm. My daughter spent hours slipping and sliding trying to get home in Missouri and eventually stayed with a friend near the last place she slid off the road and managed to get out of the ditch. Unless a thaw comes through it may be difficult for her to leave and change planes in Chicago to get here by Tuesday night. Louise: You are right about senior vitamins for women not having iron and those are the ones I buy, too. quote - what I did was click the quote button in the bar above, delete the words in the bar then copy and paste the quote into that gray outlines space.

I really like eggs and to me, the organic eggs taste better. The ones I buy are brown.
It's snowing here in NY but it's supposed to turn to rain. I usually walk over to my 7 AM WW meeting. Not sure yet how that's going to work out. I'll be bundled up for sure, or I could take the car. We'll see. Be safe everyone.

I love eggs. I always have hard boiled eggs in the fridge for a quick snack. They even come in their own package. I'll buy whichever color is cheaper since they're basically the same. Same price, I'll buy brown. Why? who knows.

I'm not really big on eggs. I'll eat them cooked most ways but I don't use them enough to even keep half a dozen in my 'fridge. When I'm cooking and something calls for them I'll get the egg white processed kind in the carton (unless things call for a separated egg). I usually end up throwing some of that out because I don't use the rest of it quickly enough. The cheesecake recipe looks good but I haven't used tofu in a long time. Again something that I don't use up before it spoils. I also recall reading some negative things about tofu. Although I can't remember specifics it also led to my decision not to use it anymore.
Cathy-for the quote; I did what you said and the quote appeared in the box. Then I added a comment below the quote box. When I posted that the comment just disappeared. I tried several times to get it to work. What I mostly got was partial bits of the quote or my comment showing in the box. In one case it was surrounded by <function>. I don't remember exactly what the function was but it wasn't one I recognized.

Hope your daughter gets unstuck. Did warm some late yesterday but need to watch some compacted icy places. I eat a veggie (kale shredded with carrot shreds and onion)omelet daily. Use 1 whole egg and 3 egg whites. I freeze and toss the extra yolks.

Hope your daughter gets unstuck. Did warm some late yesterday but need to watch some compacted icy places. I eat a veggie (kale shredded with carrot shreds and onion)omelet daily. Use 1 whole egg and 3 egg whites. I freeze and toss the extra yolks.
