Oh my goodness, it's almost time to plan the garden and I still have at least five ziplock bags filled with green zephyr and sunburst squash. What to do?

Hi - I also still have squash - which is going into soups, stir-fries and (pulse in food processor while still partially frozen, or you will have glop) zucchini breads. Casseroles don't work so well, the frozen squash tend to get mushy. But in stir-fries, they are great! And today there will be frozen squash added into chicken soup, along with frozen tomatoes & fresh asparagus!
And yes, it is "almost" (we had snow here this AM) time to plant a garden, but there won't be any squash for quite a long time - although stuffed/fried squash blossoms are delicious!

What else do you plant in your garden? We have jalapeno peppers, tomatoes, carrots and eggplant right now. The peppers and eggplant are really great producers so far - the others... not so much (yet).

Hope this helps get your creative ideas cooking! Thank you for the great ideas. I was worried about stir fries but I'll start using them up soon that way. Azcristi, I'm cutting way back this season. I used to have three plots and grew pole beans, broccoli, kale, all the nightshades, a dozen tomatoes, hot peppers, lettuces, on and on. My back keeps getting worse, and I'd rather do other things in the summer, so I've cut back to one plot and plan spring lettuce, two regular tomatoes and one cherry tomato, a couple of bush squash and bush beans, and all my herbs. I put in a lot of butterfly perennials and like to watch the hummers move between those flowers and all the herbs.

@naturelover - Omgosh, that is a LOT. We just have a small "garden" in our backyard. My husband is retired, so it's just enough to keep him busy - in addition to some fruit trees and mowing the lawns.
