If you don't have cooked "taco seasoned meat" (beef, turkey, doesn't matter), cook 6oz however you like it seasoned then continue. This makes 2 large servings
6oz cooked taco seasoned beef, cooked, drained well (I used 90% lean) 1 can ro-tel tomatoes with green chilies 1 can black beans, drain lightly but don't rinse 8oz less sodium or sodium free beef broth (or water) 3-4T tomato paste mixed into 4oz water or broth additional taco seasoning to taste (chili powder, cumin, garlic powder, onion powder, salt, pepper, oregano)
Mix everything in a saucepan and bring to a simmer. Cover and cook on low for 5 minutes or until heated through.
Top with greek yogurt/sour cream, avocado and pico-de-gallo if desired.
