BREAKFAST - broad beans with tomato heated in microwave then black coffee
LUNCH - baked potato topped with red beans in tomato-onion sauce, radish greens with lemon, olive oil and pounded garlic AND chicory greens with lemon, olive oil and chopped onions, with strawberries for dessert
SNACK - persimmon
DINNER - diet/high fiber bread[2 slices] with veggie patty mustard and ketchup, cucumbers and carrots

BREAKFAST - toast with avocado sprinkled with seeds and black coffee to drink
LUNCH - bowl with rice, bean-corn-hummus-tomato sauce mixture and grated carrot mixed with red and green cabbage salad with garlic-lemon-olive oil dressing then fruit salad for dessert
SNACK - persimmon
DINNER - leftover cabbage salad with peanuts and leftover soup made from stir fry, broth, leftover bean mixture from lunch

Breakfast - oatmeal with fruit salad and tsp carob molasses with black coffee
Lunch - spinach-onion-bulgur-black eyed pea one-pot dish with fruit salad for dessert, grapefruit and ten peanuts Dinner - all bran, walnuts, soy milk
Note - recipe for lunch...chop onion and cook in tsp per person olive oil till soft and beginning to turn golden, add chopped spinach and stir, add 1/4 cup half-soaked coarse bulgur[drained], 1/4 cup black eyed peas per person and cook till bulgur is hydrated. Season with salt and pepper.

January 18, 2023 [ate out so stayed vegetarian for lunch but not vegan]
BREAKFAST[6] = oatmeal topped with carob and fruit salad with coffee
LUNCH[18] = started with fresh dinner rolls with olives and an olive pate to spread on them then BAKED POTATO sliced and drizzleed with truffle oil, mushrooms, and blue cheese topped with rocca - green salad with this and that - eggplant rollatine with mozarella. WE both think we could have made better but it was a nice change. It was 1,700,000 with the tip or about 30 to 40 dollars. also shared pellegrino fizzy water.
Had a grapefruit when I got back and might have some fruit salad

BREAKFAST - 3oz avocado sprinkled with minimal sesame and ground flax seeds pretending it was everything bagel seasoning on toast with fruit salad and black coffee to drink
LUNCH - deconstructed stuffed zucchini with rice, onions, zucchini, chopped green pepper, tomato paste, bouillon cube plus water to make broth, garbanzo beans...all in one big pot
DINNER - 40g all bran, chopped strawberries and banana, with soy milk
SNACKS - 1/4 oz peanuts, grapefruit, mandarin, cucumbers

BREAKFAST - white beans with some leftover spinach-onion-bulgur-black eyed peas and a tomato all cooked together in the microwave with black coffee
LUNCH - leftover rice-zucchini-dish from yesterday, grapefruit, tangerine
DINNER - vegetable soup made with some leftovers plus cooked potato, carrot, onion, broth added in and a veggie burger on bun with peanut butter in apple halves and a few peanuts for dessert

BREAKFAST - seasoned small white beans mixed with a cooked tomato in a bowl with coffee to drink and a grapefruit LUNCH[17] - two smaller than some manoosh zaatar with chopped tomato and cucumber Dinner[6] - all bran with soy milk and chopped banana
NOTE - zaatar is sesame seeds, thyme, sumac and salt that is used in various ways as a spice but for manoosh is mixed with olive oil and spread on uncooked rolled out pita dough and baked in the oven. Adding chopped vegetables, olives, mint is often done and also you can add labneh-condensed yogurt spread on it if you have vegan OR if you are eating dairy and not vegan

BREAKFAST - canellini beans with large chopped tomato cooked together in the microwave with spices, coffee, and a navel orange
LUNCH - basmati rice, borlotti beans in tomato sauce with onion on top of rice then cabbage on top of that with a salsa-salad made of cucumber, tomato, onion, garlic, lemon juice, bit of olive oil, salt and pepper on the very top for dessert there were apple halves with peanut butter in the cored out area
SNACK - popcorn, cucumbers
DINNER[❔]
Not sure what I will have...could go for cereal with soy milk or maybe just some walnuts or peanuts to top off the points...or stop now

BREAKFAST - canellini beans with tomato, grapefruit and coffee
LUNCH - angel hair pasta with the cauliflower alfredo and a banana
DINNER - may not happen or may...only have maybe 4 points left and am not sure about the points for the pasta so...we will see.
NOTE - Today I had a craving for pasta SO I made some using the cauliflower I had cooked previously to make the sauce. I put it, an onion, some garlic, bouillon cube and water into water and cooked awhile then whirred with the blender till smooth, adjusted seasoning with salt, pepper, nutmeg, dijon mustard, soy sauce, hot sauce, and called it good. It would have been nice with some mushrooms or spinach, too. I didn't measure or use a recipe but vaguely followed a vegan recipe or two combined together to create the sauce. Hubby added yogurt to his but I thought mine was fine with the addition of extra nutmeg and more salt.

BREAKFAST - toast, with tomato, chard and egg, and latte
LUNCH - fattoush salad, pizza, fries, toom [ate lunch out - fattoush is green mixed salad with pomegranate molasses dressing, toom is like a garlic mayonnaise, and the pizza was like a tortilla topped with cheese
DINNER - leftover angel hair pasta with cauliflower sauce from yesterday

lunch - sweet potato with fruit butter and beet chopped up on top of it
dinner - manoosh with labneh[dairy so vegetarian]
snacks - peanuts, walnuts, tahini with sugar
I decided today to add back in laban/yogurt, labneh/yogurt cheese/Greek yogurt, and eggs...having beans as the major protein for four weeks while counting points meant less variety as there are no vegan protein sources like tofu, seitan, veggie burgers, etc found in Lebanon and making them from scratch takes a LOT of time and energy.
