I hadn't thought a lot about fall flavors. I know that there's usually some sort of short news articles about coffee shop fall flavors around this time - especially Pumpkin Spice, but since I don't frequent coffee shops, not something I pay a lot of attention to.
The things listed do make me think of fall. Although, I eat apples year around, so maybe not that one so much.
I'm not sure why, I'm not overly fond of cinnamon and maple flavors. I remember a dessert from school lunch when I was a child - rice with cream/milk and sprinkled with cinnamon. I always wished they would have had some portions without cinnamon. When I think of maple flavor, I think of syrup for pancakes or waffles. I don't eat either of those much anymore, if I did, and wanted syrup, I'd choose a fruit syrup over maple.
I do like sage flavor (stuffing, for example). I was disappointed the recipe linked in the article only used a sage leaf as a garnish.
I might include some squash varieties as a fall flavor or ingredient - like butternut squash.
The leaves are starting to fall more, but the temperatures have been more like summer. Looking forward to some cooler days.

Glad to see some of the fall flavors that don't include pumpkin. Pumpkin is one of the few foods on earth & one of the only one of the veggies that I don't eat. I love sweet potatoes & I like butternut & other winter squash ok, just NO pumpkin!
I have a sage bush that I have totally neglected this year. It is still living, so maybe I will be able to get some fresh sage from it for my fall cooking. I am asked to make stuffing for several different dinners, at Thanksgiving time.
Cinnamon is a stable in my kitchen, one of my favorite flavorings. Also maple flavoring is always on hand.
We had a bit of cooler, fall like, weather last week, but the heat is back on this week. I am looking forward to the changing of the leaves & cooler weather.

I really enjoy apples, especially crisp ones. When they're mealy, I won't eat them. When I was a child, we got Macintosh apples and I absolutely loved them. However, I've tried Macintosh apples a few times during the last 35 years that I've been in San Diego County and they were mealy each time. I decided that if I'm not somewhere in or near the east coast, I'm not going to find crisp Macintosh apples. I did discover honeycrisp apples, though, and they have become my favorite (kicking fuji apples out of #1 on my favorites list).
I'm not crazy about cinnamon. I don't mind the flavor itself so much as I dislike when there's a preponderance of it... Over the years I haven't found an herbal tea that includes cinnamon that I've liked. DH bought braeburn apples a month or two ago (by mistake) and I made applesauce with a small amount of cinnamon and that was delicious.
Because I'm sensitive to sodium, I steer clear of anything with added salt, including salted caramel.
When I was growing up, my parents drove to some county fair in New Hampshire and always (always!) brought home real Vermont maple syrup. That was the only thing we ever put over pancakes. I didn't even know there were other kinds of syrup until I was an adult. I still prefer maple, and for sure I prefer pure maple to the sugar ones with maple flavoring...
Chai is not a favorite of mine either...
I really like the fragrance of growing sage (that is, outdoors while it's still growing). I have used the powdered kind in stuffing for turkey (although not for many decades).
I have nothing against pears. I don't love them like apples, but they're fine.
I learned how to make brown butter in a class (maybe in junior high? or maybe later...) but have never chosen to do it at home.
I'm not a big ginger fan. I don't care for it in herbal teas at all. I'll take a taste of gingerbread cookies but not finish even one whole cookie...
I have nothing against bourbon. I've never added it to any food I was preparing. I've tasted foods that were made with some and enjoyed the taste of the cooked version (more so than when poured from the bottle...).
The weather has been in the low 70s for the last three or maybe four days. I'm loving it! Especially since the previous few weeks saw temperature bordering on 100... I'm wearing jeans today (wore shorts yesterday, but it was chilly enough this morning at 7 that I could have worn a sweat shirt over my t-shirt...

Autumn Flavors I like:
Apple Cinnamon Salted Caramel Maple Sage - in stuffing Pear Ginger + Brown Sugar Winter squash Beets Not sure it chili is a flavor but chili, stews, and such come to mind...and hot chocolate, hot milk with honey and cinnamon on top, and hot cereal with brown sugar and apples.
