Hi everyone, I need some ideas on low point side dishes. I'm pretty good at dressing up chicken, pork chops, or steaks, but then I have no clue what else to put on the plate.
Right now the old stand by is a bag of steamer veggies-one of those mixes like cauliflower, broccoli, carrots, etc.
Sometimes I'll mix that bag into rice or pasta to stretch it.
We also do a lot of baked potatoes.
But other than that I really don't know what else to do.
Unfortunately, DH doesn't do zucchini or squash.
I'd appreciate any ideas. Thanks

Since it is summer how about cucumber, tomato and onion salad? I dress it with white vinegar, salt and a little sugar. Seems that we eat lots of salad in the summer. How about sweet potatos? And I roast a lot of vegetables like asparagus, green beans, carrots, cabbage, peppers , onions. Hope this helps!

Thanks Linda. I guess one of my problems is I don't buy the ingredients. Now that I read your post, I do like cucumber salad and I love roasted veggies. I just never seem to have them on hand.
Maybe I have more of a shopping problem than a cooking problem!
Tonight is french onion pork chops with a steamer bag of veggies mixed with egg noodles.
