NO EXCUSES

4. Eat tomatoes and tomato products. One four ounce tomato supplies about one-third of your daily need of vitamin C, plus a little betacarotene, potassium, folate and other B vitamins, iron, and fiber. Tomatoes are also rich in a carotenoid called lycopene, a potent antioxidant. The lycopene in cooked and processed tomatoes (sauce, paste, salsa, canned tomatoes) is more easily absorbed than that in raw tomatoes. Watermelon and pink grapefruit also contain lycopene.

I have tomatoes for breakfast most mornings - like them cooked in the microwave then on top of my egg on toast. I also like pasta with tomato sauce...funny thing...I like tomatoes cooked but don't like them very much uncooked.

Not the best time of year for tomatoes for sure. My son gave me a jar of Tomato Relish that was super tasty and also spicy. Kind of a sweet/hot combo. I had it on my chicken last night and it was great and now I know I also got a pinch of lycopene boost too. Nice!
