NO EXCUSES

5. Choose skinless turkey breast—it’s just about the leanest of all meats. A three Âounce portion has less than a gram of fat and 120 calories. Plain roast turkey is your best bet: turkey cold cuts and selfÂ-basting turkeys can be quite high in fat.

The turkeys here are usually frozen butterball or prestage that have been shipped in from abroad. Finding "fresh" can be done I have heard. Received one the first year of marriage - still alive - when it arrived home it was huge, I had never cooked/baked one and the biggest pot didn't hold it all - it was a mess. I usually have deli turkey if at all and roasted at Christmas only.

I never think to use turkey instead of chicken on a regular basis. I should mix it up, especially if it's so lean. We had a nice turkey at Christmas but it was the whole bird. I think next time I just want to cook a big breast. Growing up I had a grandfather who always got the huge leg. No one at my table now eats the big parts. To me it just seems like there's a lot of waste. After all the work & time, and all the space it takes up in the oven, it just doesn't seem like the yield is worth it.

Recently my supermarket was out of chicken breast. BUT they had cut up a bunch of xmas turkeys and had them at a good price. I bought a breast. You could also get legs and/or thighs, 1/4 or 1/2 turkey. It worked fine.
I should check and grab another one for Sat dinner.
