I ran across this recipe years and years ago and I had it on a Word file lol.
Mash 1 banana Mix 2 eggs, 2T water(or almond milk) and 1 packet instant oatmeal (any flavor, if you use plain add a packet of sweetener, cinnamon, etc);
Mix well, bake at 350 for 15 minutes or microwave for 1-1/2 to 2 minutes. Let cool slightly and enjoy.
Personally I like to make this a day or 2 ahead of time and refrigerate it then either warm it slightly or eat it cold. It's *almost* like a big banana muffin.
The quaker lower sugar oatmeals make good options.

DotRen I have a stupid question. This looks good and I want to try it but I just have to ask what do you bake it in? Muffin cup, square pan, just plop it on a cookie sheet, flatten it, roll it?! Help a girl out please 😉

DebDoesWW, I have a 2 cup pyrex round thing lol - it's bigger than a rameken, I think, about 3-1/2" round? Like the dash mini waffle maker size.
