I have a very simple rice and beans that I fall back on when my cooking plans go awry. I always have a few cans of organic low sodium black beans on hand, and I also always have a fair amount of precooked black or wild rice. One serving: 1/2 cup black beans 1/2 cup rice Top with a Tbsp. of grated cheese (I use reduced fat because of cholesterol lowering efforts) Nuke in microwave for one minute Top with a little sliced red onion, a couple of Tbsps. salsa (I have a fabulous fresh one made locally) and a Tbsp. guacamole (ditto on a great premade guac that is available at my grocery store) DH adores this, says he can eat it every day.

This is a good, easy replacement for a chicken or tuna salad sandwich. I put pickles in mine to be quicker sometimes and leave out the celery and tomato. The more pickle, the more it tastes like chicken versus tuna to me. So good.
Vegan Chickpea Salad
Servings: 2-4
Combine:
1 can chickpeas chopped 2 tablespoons vegan mayonnaise 2 celery stalks chopped 2 tomatoes chopped

Can't find the original recipe but what I do is:
1 can of beans (your choice) drained and rinsed 1/2 cup oats (dry)
Put above in bowl and mash with potato masher then add in:
Chop/grate your choice of onion, carrot, zucchini, whatever (like 1/4 cup maybe) and saute in broth or tsp oil till tender/limp
Season with your choice of: salt & pepper and the flavor you are in the mood for
liquid as needed: salsa (might want to season with cumin), ketchup, tomato sauce, broth, soy sauce (haven't tried this one), water... You may not need any liquid depending on how much there is from the veggies.
Form into patties and cook on non-stick pan with or without oil or spray with PAM.
You can dip the burgers or freeze them if you have leftovers.
I play with this recipe and use what I have in the house. I have made garbanzo with falafel seasonings and oats or cooked bulgur and it is a lot like a falafel burger

This is one of my favorite go to simple meals. Serve with a salad and you are good to go. Add some seasoning of your choice, I add horseradish. Saute some spinach with garlic, you can also throw in some chopped marinated artichoke hearts. Cook an egg to your liking. Make a pile with the mashed sweet taters, make a dent for the sauteed spinach, top with your egg. This is my simplified version of a recipe Susiq25679 gave me. I am a lazy cook. It is one I fix a lot.

bee, I always have a problem deciding if something is a sweet potato, or a yam.... and I don't think the store knows either! Got any ideas on that?

cozyhomelife, In Lebanon they have "sweet potatoes" that are white inside and rarely do we find the orange ones I grew up with in the USA. I just googled and found this:
