National Fettuccine Alfredo Day National Periodic Table Day National Send a Card to a Friend Day How cute is this story! "Alfredo di Lelio, an Italian restaurateur, created Fettuccine Alfredo in 1908. After his wife had given birth to their first son that year, she did not have an appetite. To help encourage her to eat, he created a dish of noodles, cheese and butter. She liked the dish so much that she thought he should put it on the menu at his small restaurant in Rome. Everyone around the world has been enjoying this dish ever since. Today it is one of the most popular pasta dishes in America." www.nationaldaycalendar.com/national-fettuccine-alfredo-day-february-7/

I agree- now I have a craving. And my DH doesn't like it so I can't make it tonight.

This may sound weird but I miss being able to eat the Smart Ones Fettuccine Alfredo. When I had a craving for something gooey and cheesy and pasta-y I would nuke it halfway, stir in chopped broccoli to give it more bite and portion size, finish it off and enjoy. Craving cut without giving me a heart attack or breaking the scale. My wheat intolerance diagnosis sure ruined that romance.

That’s a day I can get behind. Sadly, healthier immitations just won’t do for me. And I’m okay ingesting all the fat on occasion, but the noodles seriously raise the blood sugar.
FA was my father’s favorite…very bad for him but it made him so happy when he was able to order it, usually at Olive Garden.
