How did Week One go for you? Do you need to make any changes as you move into week 2?
AOTD:
I bought opal apples which are yellow, firm and sweet. I got them at Sprouts and enjoyed one most days. I will continue to enjoy them this week.
A few days I got into cookies which were counted and tracked, but I do know the scale does not like refined sugar. I am going to stay focused as I get back on track with limited sugars.

Did you try any new/different foods this week? Please share. Not really - did put mustard seeds in basmati rice instead of eating it plain
How did Week One go for you? Do you need to make any changes as you move into week 2? Need to NOT bring some things into the house, I think!

New foods - nothing totally new, but some I haven't had for awhile. I cooked some quinoa ahead so I could have a grain salad/bowl...whatever you'd want to call it.... in the afternoon. I had tomato, avocado, cooked chicken, thawed frozen corn, canned beans, on hand for that as well.
Went well, need to continue to be prepared.

New foods, we received Blue Apron as a Xmas gift, we get 3 meals each week for 3 weeks. The second shipment is due today. The meal that I enjoyed most last week was pork with stir fried rice. I had never had pork served that way before. It was very tasty. I like trying the new recipes. I have requested the order be changed over to all WW recipes for this week, we will see what happens.
All & all the week went pretty well, I am planning on doing more cooking this next week.

Didn't buy anything "new" but I picked up some eggplant (on sale) yesterday to go with the ricotta cheese I'd bought from Trader Joe's... Here's what I did.
Washed and cut the eggplant lengthwise into eighths; sprayed with olive oil spray and roasted in a 400degreeF oven about 25 minutes. Separately: Opened a 15-oz can of diced tomatoes, no salt added Put into a pot Added a heaping Tablespoon of minced garlic (from a jar) chopped some mushrooms (I'd estimate 1 cup) and added that Skinned the roasted eggplant and cut into small pieces (maybe 1/2" or so), then added to the pot Added dried basil, about 1 Tablespoon, later in the cooking process
Separately, boiled a large pot of water, added 100% whole wheat pasta (enough for DH and me), cooked until al dente
Separately, put about 1/4 cup of ricotta cheese in the bottom of each of two bowls
When the pasta and the sauce were fully cooked, added the pasta on top of the cheese, added the sauce on top of the pasta; stirred everything together, and served.
It was yummy!

I haven't tried any new foods, nor did I try any new recipes. I've been dealing with a cold and low energy so I haven't done anything new or interesting lately. Next week will hopefully be different.

I tried a couple of things- cauliflower "potato" salad. It uses the same base as potato salad but instead of potatoes, it has cauliflower. I think that you cook the cauliflower just a bit because it was crunchy but not hard.
I am also drinking a cup of honey chai turmeric tea. I keep hearing the turmeric is good for you and I saw this tea. It is actually pretty good. Holly, I am thinking of you, because it is herbal/caffeine free and tasty besides !

I have an appointment with a physical therapist tomorrow for my knee. If this doesn't help, I will have to go back to the doctor. I have struggled with walking since last Thursday. So I need to make sure that I am not eating like I was still being very active. I will definitely be watching what I eat this week.
