I have a manicure this morning and will pick up yogurt at Whole Foods in the same center. Later I get Leo from kindergarten. In the past few days I had new lighting installed in the kitchen so I need to put back pictures and plates removed from the walls. It will be a pleasant morning with rain expected for the evening. I hope it is clear tomorrow because there is a coffee at the home of a woman's club member near me and I would love to walk to her house instead of drive. bee I will post the ingredients for the acorn squash dish and we can figure out how to recreate it. I hope everyone has a lovely Tuesday. Dinner tonight is red curry tomato lentil soup from Simple by Ottolenghi, an Israeli chef in London. My son and his wife gave me the cookbook for Christmas and it is the first recipe I will try. My son and one of my daughters has made it. I bought a small sourdough loaf and will make a salad to go with it.

Bee again good luck at the eye doctors. We're twins tomorrow lol.
The roofer will be coming tomorrow. I also need to make a pit stop at Walmart at some point.

bee Here are the ingredients roasted acorn squash with roasted sweet potato and mushroom ragout, charred broccolini and caulilini, huckleberry and pumpkin seed dukkah, butternut squash pudding the sweet potato is cut in small pieces and probably sauteed with the mushrooms Regular broccoli and cauliflower could be substituted for broccolini and caulilini, charred on high heat after roasted Not sure where he got the huckleberry but pumpkin or sunflower seeds or even pine nuts can be added to a grain. Dukkah is a grain but I can see Israeli couscous as a good substitute or quinoa etc. The butternut squash pudding is basically a puree piped around the plate to make it pretty So I would roast the acorn squash and then roast broccoli and cauliflower and possibly the sweet potato. Sautee the mushrooms and mix together over the squash. Top with the grain to which is enhanced with seeds or nuts. I am posting the photo again on my FB page so you can look at it.

Audrey, never heard of dukkah, but always have quinoa. Was it a half an acorn squash, or a circle slice of one. or a quarter of one?? Sounds real good. Thx. Researched dukkah and found this recipe. It isn't a grain. The recipe follows. makebread.com.au/homemade-dukkah-recipe/

* drink plenty of water * make the lemon bars for tomorrow * make wiser decisions than yesterday where calories are concerned

Winds have finally died down a lot. We'll "walk the yard" to see what needs cleanup. Temps will be in the 30s with wind chills 10* colder.
DivaTaxi & MHMR are on my schedule, and then I'm heading for fasting bloodwork (hepatic function panel). T-G I can still have my coffee. I also need to get to the bank; Toots' check arrived in yesterday's mail (#2 of 6 of his severance pay).
I was finally able to print out my Medicare Part B card yesterday (while we're waiting for the "real" ones to arrive) and the Med Part D deduction from SocSec is in process but I paid for February for each of us while we're waiting for confirmation from SocSec.
The Kressling and K'ling2 had soccer practice last night at two different locations. The Zigster ended up here with Toots while I took the Kressling and Son#1 took K'ling2. Tonight Toots has rehearsal and I think the Kressling is coming to practice trombone.
I may defer the grocery run to tomorrow, since ShopRite is having a special sale Weds-Sat. That way I only have to go once. I think we can make it through today with what's on hand.

Audrey - Sounds like a lovely day. Enjoy! Loved the picture of the squash. Dukkah is a new one for me. I too am having red curry tonight only on chicken. Good luck with your eye appointments Bee and Ann. Bee - I found something similar when I looked up dukkah Have an aware day Becky! Cathy - You are here. Have a better today! I'll be doing the same about Shoprite MJ as that's a great price on the shredded cheese and pineapple. I don't eat enough fruit although no problem with veggies. Ann - Hope the roof is minor. I lost a lot of thatch from the tiki bar that I will need to clean up. Replacing the thatch is pretty much standard spring maintenance any more. I'm making Thai red curry chicken with broccoli for dinner. Going to see my accountant (and dear friend) after work.

Susi your dinner sounds good. Have fun visiting your accountant friend after work. Carl cleaned up the yard. We had a lot of branches down. Luckily none fell on the house!

Susi I love pineapple but don't buy it near enough.Your dinner sounds good.
Ann I'm glad no limbs fell on the house.
Nothing much planned here today.It's cloudy and misting rain on and off.We may make a quick trip into town.Other than that cleaning house and exercise and drinking lots of water.I am also planned and tracked.

I'm home from LabCorp (got home 10-ish but FOOD was my priority, LOL).
I am delighted to report that my computer-printed-out Medicare card was ACCEPTED WITHOUT QUESTION.
I've got a load of laundry ready for folding and it's time to sit with the budget. Not a bad thing, just something about which I've been procrastinating.
