Not sure if this is very familiar here, but I saw a recipe for Yogurt Bark on the lid of my Stoneyfield Organic low fat plain yogurt. I made it and it's nice and can be quite low cal. You can choose any toppings you like, plus optional extract(s) and optional honey to sweeten. It must be frozen and remain frozen. Perhaps a nice treat in the summer. I halved the recipe and considered that 6 servings, though even just 1/18th was fine for me as a mini snack
* 1 cup plain lowfat yogurt * 1/2 tsp extract(s) - optional * 1 1/2 Tbs honey - optional * Toppings of choice. Suggestions:
Chopped fresh strawberries, frozen wild blueberries (they're small), toasted chopped almonds, toasted unsweetened coconut
or,
Dried fruit chopped and chopped nuts
or,
Fresh pomegranate seeds and mini chocolate chips
or,
Whatever
Mix yogurt and optional extract(s) and honey. Spread this on a parchment paper lined cookie sheet to desired thickness (I spread it until it was thin, but not see through). Freeze for at least 4 hours or overnight. Cut into brittle type chunks then store in an airtight container in the freezer.
