Please see www.allrecipes.com/recipe/215311/hearty-vegan-slow-cooker-chili/ I left out all the vegetables (didn't have any on hand) and used a total of 3 15-oz cans of beans (1 can black beans, 1 can kidney beans, 1 can white beans) plus 1 15-oz can of pumpkin puree, 1 28-oz can of crushed tomatoes (for the first time I can remember, I didn't have more than one 8-oz can of diced tomatoes in the house!). Added approximately 3 T dried oregano. Did not add anything hot like cayenne. All in the crock pot, low, overnight, something like 5-ish hours. It looks like soup. I just added 1/2 cup quinoa (hoping it will absorb some of the liquid). I'm supposed to take it to work in about 3 hours. I NEED ADVICE! Any help will be greatly appreciated! Thanks in advance.

Holly, I made something similar over the weekend, I didn't use any recipe, just threw it together off the top of my head. I didn't use veggies either, other than the beans & an onion, of course a can of the crushed tomatoes & seasonings. I just cooked mine on the stove top, it was kinda soupy too, but it doesn't taste bad. Good to have something on hand that is 0 sps.

bmazzo , Bev, I agree about having 0-point foods around, but I'm taking this to the office. The massage therapist (who's been there about 10 years) is leaving, and the doctors are hosting lunch-type foods for patients to stop by to say good-bye to her. I asked my boss if he'd like for me to bring in a vegan chili (she and her family follow a vegan diet; my boss follows a mostly-plant based diet, although when his wife isn't around, he sometimes eats things she wouldn't serve...). So I'm concerned about the soupy-ness of what I made... Do you think the quinoa will absorb enough of the liquid so it's not soupy?

Maybe the grain will take care of it, if not, you might try a little flour (dissolved in water). Good luck!

Hi Holly. Here are a couple of suggestions for your chili. Hopefully it is getting thicker ? Can you just take some of the excess liquid out? Or put it in a pot on the stove and boil the liquid down to a more concentrated base ?
From Google:
Try cornmeal or masa harina. Adding 2 to 3 Tbsp (30 to 45 ml) of either cornmeal or masa harina straight to the chili will also thicken the liquid. Add the cornmeal or masa harina to the chili without mixing any water into it first. Mix it in thoroughly so that it absorbs some of the liquid, thickening it up. There are several ways you can thicken Chili rather than adding corn meal:
Add refried beans: this adds thickening and a richness. It does dilute the spices some so you'll want to make the chili more powerful to compensate Cook it down: Why add a thickener when simply simmering with the lid off will do it for you? It takes some time (an hour or so depending on the water content of the ingredients you add), but it will concentrate the flavors and give you a nice, thick chili without any additional ingredients at all

I usually add in some polenta (cornmeal) to thicken chili. It is too late to help out but you received great advice from everyone. How did it turn out in the end?

Thank you, everyone. Adding the 1/2 cup of quinoa did the trick! I left it in the crock pot for about a half hour (possibly a full hour) and there was no more soupy-ness! It was a BIG HIT yesterday at the send-off for the massage therapist. I didn't see some of the replies before having to leave the house (with the crock pot in tow), so didn't see the suggestions about adding starch, but in particular I liked the idea of adding cornmeal, especially since I usually add some frozen corn but couldn't find any in either freezer Tuesday night!

yup. Quinoa will cook in about 15 minutes on its own and easily absorb twice its volume in water. Good choice!!!
