Lately, I haven't been eating everything in my daily menus.
B: A slice of homemade sugar free angel food cake with lots of berries and 2 tablespoons of light whipped topping; 1/2 cup Tropicana 50 OJ; coffee with skim milk.
L: One Boca vegan burger on one slice 647 low cal wheat toast, with lettuce, a little light mayo with fresh basil, and tomato; various fresh veggies on the side.
D: Small bowl homemade lovage soup (incl. root veggies); half serving homemade rice pilaf; half leftover lean bbq sous vide spare rib on one cup raw baby spinach; sauteed mushrooms and onions in teeny bit Smart Balance spread w/olive oil.
S: Homemade skim milk "frapuccino" with Truvia, topped with 2 Tbs light whipped topping and small drizzle of pb2 fit "syrup" and a little bittersweet chocolate shavings; a couple celery sticks and halved baby bell peppers filled with a little Philadelphia low fat vegetable cream cheese; a couple calcium chews; and maybe a leftover thin frankfurter* (no bun) with mustard (if I'm really hungry).
Total day's nutrition info:
1,119 calories, 125 g total carbs (18 g fiber), 44 g total fat (18 g saturated fat), 54 g protein, 47 g total sugars, 2,354 mg sodium, 104 mg cholesterol
* If I skip the frankfurter, I won't go over my saturated fat and sodium allowances.

Your whole day's menu. I wish I had your tarragon sauce recipe. I love tarragon! What is different about Mexican street corn compared to regular corn on the cob? I've never heard of Mexican street corn. Is it just corn on the cob sold on the streets by Mexican produce vendors? Or a unique variety?

Cotija cheese is usually at every single supermarket I've ever been to. Usually in the dairy section near the refrigerated pasta. The section that has a lot of refrigerated ethnic foods like Asian, Mexican, etc.

finreporter , susiq25679 , thanks so much on the tips for finding the cotija cheese. I have a World Class Shoprite very nearby (my regular store to shop) and there is a Stop & Shop within 20 mins. I'll look in the dairy section near the packaged cheeses (i.e. the packaged chedder blocks, pre-packed slices/grated, or the farmer's cheese). There is a population of people originally from Mexico and Central America in my area, so I assume they have it.
