Each new day comes bearing gifts!
Well, here we are again, the last week of this challenge period. I don't know about you guys, but I almost never meet my challenge. I start off determined, then, just a week or 2 into the challenge, I have blown it!! I thought maybe we could share what we have eaten for a couple of days this week, maybe we could give each other some ideas and insight into what others are eating. Let's share the good, the bad & the ugly of what we ate yesterday, 6/19, here's mine.
Breakfast: 2 eggs cooked in pam, toasted lt english muffin, meatless sausage patty, mixed berries, coffee.
Lunch: SF cornbread, green beans, tomatoes
Dinner: Chicken breast cooked with salsa, boiled corn, sliced tomatoes
Desert: SF blueberry cobbler
Snack, I have melon for later if I am hungry.
Looking at this list, I see, right off the bat, that I am eating too much bread & starchy foods. Anybody else want to share? No judgement here!

Breakfast: boiled egg with mayo and mustard on toast with coffee
Lunch: Roadster Diner - onion wedges (battered and fried), vegan burger on bun, salad and fries
Dinner: Seitan and wine
Yesterday was an odd day - out and about seeing old ruins. Meal out. This week is not on program with daughter visiting

Breakfast: Slice of homemade whole wheat toast, peanut butter, banana Lunch: Cup of lentil veggie soup, 6 Triscuits Dinner: Quinoa, stir fried veggies (onion, garlic, bell pepper, broccoli, sugar snap peas, mushrooms) Snack: Pear; grapes, nuts
I don't really remember my first high heels, but a favorite was a pair of white strap sandals heels.

Bev, I'm looking for a good SF recipe using corn meal. Did you make the SF cornbread you just ate? If so, would you please share the recipe?
And if not, does anyone else have an SF recipe using corn meal? I'm thinking along the lines of polenta maybe...

Most of my meals are SF. I just now ate two eggs made in a mug in the microwave (a la Hungry Girl). Mid-morning snack is often a WW smoothie made with skim milk (and fresh frozen fruit, sometimes also with a handful of fresh spinach, almost always with a banana thrown in, and often with a couple of ice cubes, everything into the blender). Lunches are frequently a small container of plain nonfat Greek yogurt and fruit and sometimes also a side of protein (like up to 3 oz of leftover boneless skinless chicken breast). Mid-afternoon snack is usually another (fresh) fruit. Dinner is frequently a large green salad with fat-free dressing (less than 2T of dressing; I don't like a lot of dressing) plus a side of protein, like maybe 3 to 4 oz of grilled boneless skinless chicken or fish.

What did I eat yesterday ?
B- smoothie made from kale, banana, grapes and oranges. Piece of ww toast with brummel and brown spread.
L- 4 chicken nuggets and 1/2 bagel, slice of colby cheese, grapes, celery, hard boiled egg.
D- (didn't get home til after 8pm, so my original plan was scrapped for this)- rice tortilla (from Trader Joe's) topped with a light spread of Brummel and Brown, a mashed banana and cinnamon. Broiled til the banana is a bit caramelized. I cut it up like a pizza in wedges. Sooooo good.
Hot tea in the morning and ice tea in the afternoon.
I don't remember when I first wore high heels, but they are probably never very high and it was probably when I got into the workplace..

We are in Co Springs and ready to head home shortly. The reset button was pushed this morning. Weβve enjoyed the get away and chose to enjoy food we havenβt had for awhile which included chocolate and ice cream. Started this morning with healthy breakfast choices. Back on track and smiling.
We were glad to have sunshine yesterday as we drove around CO Springs. Looking forward to sunshine as we head home. Have a great day everyone.

I do remember my first pair of high heels. I was a teenager, relatively young I think, like maybe 14... They were black and 2" high. I loved them. I wore them for a pretty long time (years)! I think I tried on 3" heels (I'm short, so 3" wouldn't have made me taller than the boys I knew), but I don't remember owning any, so I probably had trouble maneuvering in such high heels... Later in life, I chose 1" heels (like for work) and still later in life I stopped wearing heels altogether; I've been wearing flats (as dress shoes; I wear walking shoes or running shoes on a daily basis now that I'm retired) for more than 20 years.

Holly, I don't really have a recipe for SF cornbread, but what I make is SF. I just use about 1/2 cup cornmeal, bit of baking powder, bit of artificial sweetner, about 1/4 cup of ff yogurt, dash of salt, 1 egg, batter will be too thick. Just add water till it is the consistency that you want. Cook in sprayed pan. This makes 2 large servings. Bake in hot oven about 400 deg.
When I was about 12, my mom let me buy a pair of patent leather pumps. They had about 2 " thick heels. The looked like the old "Daisy Duck" shoes. I thought I was really grown up in those things.

First high heels: low maybe 1" but not flat and peacock/teal blue suede pumps...lovely!
