Breakfast: Coffee, black, without sugar Coffee Mate, sugar free, Italian Sweet Cream Simple Cinnamon Coffee Cake Yogurt, Greek, Dannon Light & Fit Lunch: Risotto With Ground Beef, Zucchini and Tomatoes Dinner: Chicken Parmesano String Beans Butter, regular, with salt Milk, skim (fat-free) lavonm—this is the Chicken Parmigiano recipe from “Yes, Italian.” It was pretty simple to prepare and was delicious (I don’t think I’ve had better in Italian restaurants). The one confusion in the recipe is that it says to fry the Chicken about 4 minutes per side until cooked through; but then it say to put the assembled pan of chicken and toppins in the oven and bake for about 25 minutes until cooked through. My question was: just how many times can you cook Chicken breasts through??? So I took the temp of the Chicken after it was fried, which was about 135°, then reduced the baking time to 20 minutes; some pieces were about 170°, so next time I’ll test at 15 minutes and work up from there. I will make this again.

B: Not really diet-friendly, but homemade blueberry strudel topped with light whipped topping; Tropicana 50 OJ; coffee with skim milk
L: Baked crab cake with lemon juice; light Tartar sauce; fresh basil leaves, grape tomatoes, baby peppers; one slice 647 toast
D: Pork stir fry with snow peas, red pepper strips, scallions, and a sesame flavor sauce topped with toasted sesame seeds and lime juice; small amount of Jasmine rice; I wish I had a vinho verde to go with it. Maybe I'll just have a few sips of beer.
S: Small square bread pudding; a couple biscotti thins

B- half of what I had yesterday's steel cut oats with benefits
L - LATE so...overindulged in a fried potato/slaw/garlic/pickle/whatever wrap in Arabic flat bread ((Oh MY))
D - you would need to see the day I had to understand that food .was not the priority...but...did have a bit of the seitan I made (before I realized I left the phone down the hill) and other things happened.
AND..thought I was hosting this Wednesday and plotted and planned BUT someone else wanted this Wednesday and sloth-like creature I am...I let her have it
